I believe when they're have an issue with a party of people. You should do the same bring. Badland Chuggs, your chef partner, I forgot his name but the Latino chef that is always tough. You should bring him and a couple more of your friends so you can get the experience the families and friends gets when at that establishment to make it more of an accurate review and do it with a different name so we can see how they treat the regular people. Seems pretty likely that there is a real issue based on the other reviews, but it's possible they're trying to fix it (maybe the construction crews are adding more space?). Or, if not, at least they'll get one good review before going under. Seems pretty clear that the food deserves a good review, at the very least.

I absolutely know what you mean I deliver for Uber Eats I barely get any reviews because I'm fast and I bring the food in good condition hot and usually show up early. When I do get reviews it's because some Karen wants to complain. Now I leave a message asking the customer to review me whether good, bad or indifferent.

While agree with you, service can be an absolute deal breaker. Especially when you’re in an area that has so many establishments to choose from, bad service will most likely result in a one and done unless you’re absolutely blown away by the food. I can’t speak for everyone but I know I rarely give a place a second chance when I spend my money and I don’t feel as if my business is appreciated.

Reviews based on service are always valid imho
Ratings can be ridiculously wrong sometimes. The best Chinese food restaurant in my city by far has the lowest rating by far. It’s ridiculous sometimes but that’s why it’s important to try places.

It's just something that happens with some slow cooking methods. It has to get to fully cooked FIRST before it can get to the point where the meat is falling off the bone like that. In reality it's past the point of well-done because that's when the connective tissue of the meat starts to break down. If it was cooked for a long time at too high a temp it wouldn't retain any moisture. The pink color in this is just a scientific reaction, it doesn't mean it's undercooked.

There was nothing wrong with the pork. Same way there’s nothing wrong with a smoke ring on brisket that’s been slow cooking for a day. It just means it was done properly. The bone would not have come out that easily if it was underdone, it would have stuck to the meat. It would also stick to the meat if it was overcooked at too high a temperature but that’s clearly not what happened here. They kept the temp properly low. Editing again to add: connective tissue cannot begin to break down like that unless it gets PAST the point of fully cooked. The bone slid out because that chemical reaction happened and the *connective tissue* broke down.

Pork is used a lot in Italian cuisine. I believe in Italy pork is consumed more than beef or chicken. My Mom always makes her homemade sauce with pork, so I grew up thinking that was just the norm lol. But in general lots of pork in Italian dishes- pancetta, prosciutto, salami, pork roasts, pork loin, pork stew, breaded pork chops, braised pork, pork rotolini, sausage- I’m sure I’m forgetting some lol. I wasn’t a fan of pork growing up, but it was a staple in our house for sure! Hope that helps.
