How to Clean a Lobster and Our Fave Boat Bread Recipe - Ep 20

  • During our stay at Rudder Cut Cay, which is David Copperfield’s private island and home to the underwater mermaid and piano sculpture, we had a bunch of fun learning to use our spear pole and catching lobster. A fellow Canadian sailor taught us how to efficiently and easily clean our lobster catches. We also show you our favourite boat bread recipe. There's a ton of sugar in this recipe, probably why it tastes so good, but we lessen the sugar a bit and we literally make this every two days or so!
    RICH EGG BREAD RECIPE
    - Makes one loaf (8"x4" or 9"X5" loaf pan)
    INGREDIENTS
    - 3 to 3.5 cups all purpose or bread flour
    - 1 pkg instant rapid rise yeast (2 1/4 tsp)
    - 1/4 cup white sugar
    - 1.5 tsp salt
    - 1 large egg
    - 1 cup warm water (120 to 130 degrees F)
    - 2 tbsp olive oil
    DIRECTIONS
    1. In a large mixing bowl, mix together 1.5 cups of the flour, the yeast, sugar and salt. Add warm water and oil. Beat with an electric mixer on low speed for 1 minute (or just hand mix until well blended and smooth)
    2. Add the egg and beat until smooth (or hand mix once again until smooth)
    3. Stir enough of the remaining flour until the dough is easy to handle
    4. Place dough on a lightly floured surface and knead for 10 minutes or until the dough is smooth and springy
    5. Grease a large bowl with oil/cooking spray and then place the dough in the bowl, turning the dough to grease all sides (at this point, dough can be refrigerated up to 24 hours) Cover bowl loosely and let rise in a warm place (about one hour or until dough has doubled). Dough is ready when indentation remains when touched
    6. Grease bottom and sides of your loaf pan with oil/cooking spray.
    7. Gently push fist into dough to deflate. Flatten dough with hands/rolling pin into an 18"X9" rectangle. Roll up tightly beginning at the 9" side. Pinch edges of dough to seal and pinch each end of the roll to seal. Fold ends under the loaf. Place loaf seam side down, in pan. Cover loosely with plastic wrap and let rise again in a warm place for an hour or until dough has doubled in size.
    7. Move oven rack to low position so that the top of pan will be in the centre of the oven. Heat oven to 375 degrees F.
    8. Bake for 30-35min or until the loaf is deep golden brown and sounds hollow when tapped. Remove from pan to wire rack

    How handy is Steph in the kitchen?!!! Just whips up any ol' thang no probs lol! Have never seen a pizza cut with a pair of scissors but hey what ever floats your boat - must say it is simple but effective. The hammock is right up there with a dishwasher in a house - can't live without it once you have had one.

    Well Travis, I think you got a dressing down, I like your stuff on the tools, but you got to work on the touch feely stuff. Your gal is great, you are great, keep the videos coming, I actually like the cooking stuff Steph does kind of a Galloping Gormet on the sea.

    Don't be afraid of eating small Barracuda. They have firm mild easy to fillet flesh. Apparently ciguatera is not a problem until they get bigger (over 30 inches) as they grow so fast. Unfortunately we seem to catch only huge ones.

    FYI....We discovered while visiting Aruba, where one of the beach restaurants was serving it...grilled Barracuda steaks are FANTASTIC !! (not fillets, just cut cross-section "steaks") It reminded me of Swordfish.
    Why do you flatten out the dough into a sheet and then roll back up into a loaf...what does the flattening out do ? (I'm obviously not a baker🙂)
    Nice work-out discipline!Everybody here was thinking "Oh, NO WONDER !" 😉
    But those other sailors moored next door, watching you two working up a sweat on the beach with that workout and wall-climbing are thinking "WTF !?....those wild kids don't "get" sailing and boat-life!" 😎

      We’re pretty sure some of the fried fish we ate at one restaurant had served us Barracuda. We didn’t know it at the time but it was great

      We don’t clean them while alive. They’re killed right away so they’re not suffering

    Good job on the bread. If you want it a little less crust on the outside then drop the temp 25 degrees F and increase cooking time by 20 minutes. You may have to experiment with your oven. I like to split the water half cold half really warm. dissolve the sugar and salt in the warm water then add the cool water to the warm to bring the temp down before introducing the yeast. If the water is too warm it can and will kill all or most of the yeast. Third tip, keep Travis away from the oven while cooking the bread.

      Thanks for the tips! Boat ovens are sometimes a challenge with adjusting temperatures I’ve found, I’m just glad when it turns out 😆.

    Funny! Being from North Dakota in College I had a good friend that was Canadian. He always used a scissors to cut his pizza and literally refused to use a pizza cutter. This can’t be a Canadian thing right? Stay safe guys!
