I have been using it since it launched and I still really like this oven! It has plenty of features and it is really convenient for baking sourdough without the hassle of using a dutch oven. Currently I use the oven off method to bake 2 X 400g loaf. But I've seen someone did it with 2 X 800g loafs and it seems to fit just fine! Hey there - what rack are you using to hold the steel? Looking into getting this oven but worried the sheet tray and rack are too flimsy so def want to replace those with something durable
I'm using the rack that it came with, its actually pretty solid and able to support the baking steel without any issues. The new sheet tray is quite okay too.
Unfortunately when baking with steam, the fan has to be turned on. I feel that the fans does hinder my oven spring as well. But using the double scoring method, I feel that it helps remediate that problem. I have two major gripes with this oven. It does not take a commercial half sheet pan. One inch. Customer service insisted it does, not so. I cannot find a pan that makes sense with this oven. Secondly the bottom setting will not allow you to go above 360 degrees.

What should be the internal temperature of the bread when it’s done baking.?

Is the Anova oven a convection oven with no option to turn off the fan function?
You can turn off the fan function using the mobile application.
