Loading and Lighting your Big Green Egg with minimal smoke

  • This video shows you how we light our Big Green Egg's here at the Meat Smoke Fire Cookery School. We do this with minimal smoke.

    Thanks for the great tips on starting a fire in the BGE. Your video was the best one I found on explaining how to fire up an Egg without smoking out the neighbors. So I'm getting ready to do my first cook and hopefully not much smoke in my brand new Egg.

    Great video, thanks. Just got a BGE and did first cook this evening 😅. It got up to burger cooking temp of 300c quite quickly but perhaps because I used a chimney starter for 10 mins to get my lumpwood going. Recommend that? Any concerns with that approach? It got quite smokey but that was mainly once I started cooking.

      There’s no need to use a starter chimney. You’ll get too much coal going and struggle with temperature control. Light is as per my video and you’ll find it much easier to use.

      The smoke will be the fat dripping and vaporising. Make sure you burp your Egg at those temps, especially with fatty foods.

      @@MeatSmokeFire I didn’t use the chimney for todays grilling and temp control was much better, you’re right, the egg didn’t get too hot too quickly

    Hi Guys, hope you can help, when my egg is coming up to temp … when it is at the right temp (say cooking wings and sausages at 220 degrees as my sons don’t like char) … and all conveggtor etc is already in and warmed up (as I put in once dome is warmed up at 180) … I leave the vents open still to reach the 220 and when I start closing vents for 220when it gets there is drops down to like 150 degrees and takes forever to come back up … and that is almost instantly from when I close the vents down. Is there something I am doing wrong ? As I thought when coming up to temp and you hit your target temp … you close vents down to that setting and it will hold there ? Not drop drastically ? And quickly ?

      Great video Nic, thanks. I noticed you have completed removed the cast iron grid that sits underneath your fire bowl. I’ll be doing the same next cook.

      @@risk_it_for_a_brisket5817 yes because I have the stainless steel fire bowl. You don't need the cast iron grate with it. Without the stainless fire bowl you must use the cast iron grate.

    How do u get rid of flames?

      When you’re lighting it you want flames. They will die down.

    I’ve tried this technique over and over again but can never get mine to reach 180c in 5 mins!! User error without a doubt! Normally takes me 20 mins +......😫

      Are you using dry Big Green Egg charcoal? Other brands may be much denser and take much longer to light.
      Have you taken out all the insides of your Egg and cleaned it out thoroughly? Poor airflow will cause your Egg to light slowly.
      Every one of my 9 Eggs here at the cookery school will get to 180°C in under 15 minutes.
