Funny story, I tried to cook Christmas dinner for my mom several years ago. I'd made this elaborate meal and roasted this bird. I cooked and cooked and cooked and cooked that chicken in the oven, and it just never seemed to get done (tender). Finally, after fooling with this bird for HOURS in the oven, my mom finally asked, "WHAT KIND OF CHICKEN DID YOU GET!!?!" I was like a stewing hen. My mom just started laughing and explained the difference. lol I was in my late 30's, too! lol I wound up serving that tough, old bird, anyway. Wasn't very good, but made for an amusing holiday meal. lol
You dont have to wash it or you just skipped that to speed up the video?
It is not a good idea to wash raw chicken as the splashing can increase the risk of cross contamination and hence food poisoning.

You should never wash chicken. Washing raw poultry can force any surface bacteria deeper into the muscle fiber and increase the risk of food borne pathogen infection. FDA hasn't recommended washing/rinsing chicken for decades

For those that are critical about pots and pans and, how aluminum is bad well, bad news. I'm sure you've eaten at plenty of restaurants and the food was delicious. Bet no on has ever questioned what the food was cooked in.

Washing poultry will often increase the risk of food born illness rather than decrease it. Adam Ragusea made a great video about this.
Never wash your chicken….it spreads salmonella all over the place.
