- I spent forever on line looking for a strawberry cake made with mayo, it is my favorite way to make a cake. The mayo will keep a cake moist for days, even when refrigerated. Well I could not find one, so I found a classic recipe, and changed out the butter for mayo with no idea what would happen. It turned out to be an amazing swap. Ingredients Cake:
2-3/4 cups 330 grams of flour
2-1/2 teaspoons 10 grams of baking powder
1 teaspoon 4 grams of salt
1/4 teaspoon 1 gram of baking soda
1 cup of mayonnaise or 1 cup 227 grams of butter room temperature
4 large egg whites room temperature
2 cups 400 grams of granulated sugar
2 teaspoons 8 grams of vanilla
1/2 cup 125 milliliters of whole milk room temperature
1/2 cup of strawberry puree reduced or strawberry jam (puree is 1 pound of strawberries pureed in a food processor, and cooked down)
pink food coloring optional
Icing:
1/4 cup of strawberry puree
8oz 227 grams of cream cheese
1 cup 227 grams of butter
1 teaspoon 4 grams of vanilla
1/4 teaspoon 1 gram of salt
6-7 cups 720-840 grams of powdered/confectioners sugar
