- This is how my grandmother cooked it.Pilaf is not just a dish, but a real cultural phenomenon that intertwines the tastes and traditions of many peoples of the world. Just imagine, this dish belongs to traditional Azerbaijani, Uzbek, Tajik, Afghan, Uyghur and Iranian cuisines! Each country may have its own cooking options, but the tender stewed meat, crumbly structure and aromatic spices remain unchanged. This is a great option for dinner, because both the meat and the side dish are prepared at the same time, the pilaf turns out to be a lot, so it’s enough for the whole family.
Ingredients:
1.5 cups of long-grain rice
600 g of meat, cut into cubes
2 bulbs
2 carrots
2 heads of garlic
4 glasses of water
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
1 teaspoon of turmeric
1 teaspoon of barberry
Salt to taste
Pepper to taste
Vegetable oil
Instructions:
Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for about 30 minutes, then drain.
Heat a little vegetable oil over medium heat. Fry the chopped onion until transparent. Add cubed meat and fry until browned on all sides.
Add chopped garlic to the onion and cook for another minute until fragrant.Add the carrots to the pot and cook until they begin to soften.
Add cumin seeds, coriander seeds, turmeric and paprika. Season with salt and pepper to taste. Stir well to combine. Pour in the water and bring the mixture to a boil and let it simmer for about 15 minutes. Spread the drained rice evenly over the meat and vegetables in the pot. Do not stir.
Cover the pot with a tight-fitting lid and simmer over low heat for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.When the pilaf is ready, fluff the rice with a fork to mix it with the meat and vegetables.
Serve the pilaf hot, garnishing it with fresh herbs, such as parsley or cilantro. Enjoy homemade pilaf, a dish that combines the flavors and traditions of different cultures!
