    There are a ton of different versions of "arroz con pollo" all over Latin America and this one looks very similar to our Colombian version, except we don't add green olives and use cilantro instead of parsley. I think all versions are valid as long as they taste good and this one looks amazing!

      My best friend as a kid family was from Panama. This is almost dead on how his father would make it but they always used wings and thighs bone in. One of my favorite Latin dishes

      Here in Puerto Rico is different the Arroz con Pollo! We don't use veggies or tomatoes

    That looks fantastic ... Doing this next week!! In Lebanon, we put the chicken in some water and bring it to a boil and clean the water from residue. Once the water is clean, we put in cinnamon sticks, ginger, cloves, lots of cinnamon powder, black pepper corns, nutmeg, onions, garlic, carrots, salt.. until the chicken is cooked. Using the broth, we cook the rice, and then serve it along side the chicken pieces with toasted almonds, pine nuts and walnuts and of course a side salad !! Deliciousss Xx

    It's very similar to Puerto Rican arroz con pollo, we start it with a sofrito, which is a mix of cilantro, onions, peppers and sweet peppers.

    I'm from Puerto Rico and Rice with Chicken is one of our traditional dishes. I made this today and this version of it was really good. I loved it. Everyone has their own way to make it. This is an excelent Arroz con pollo recipe.

    I'm Puertorican and I make it differently my family makes a sofrito instead of using all the pieces. so my sofrito has green bell peppers, tomatoes, onions, garlic, cilantro,green olives and sometimes a piece of ham put it all on the blender then I use a couple of tbs of the sofrito for the rice and everything else gets done the same way as laura did except I don't add peas but it all looks good. love your show and your food ideas you are most excellent keep cooking and bringing us more recipes thank you

    I just made it and it is so beautiful, being a Pakistani I know well how to deal with rice, usually we soak rice in cold or lukewarm water, but here no soaking so kind of nervous I was. But I'm glad that none of my rice grains are broken and perfect aroma in the house, the only thing I didn't put its green olives ( I used black pitted one then)
    And onion powder but everything is good

    Laura! this recipe looks so delicious and simple. I am a college student, and although I do have a kitchen to cook in, it's hard to get expensive ingredients and cook complicated dishes. I would really really love if you made a recipe that is simple and easy enough for college students! You really inspire me with your cooking, and I always want to cook your food after watching you enjoy it!

    My favorite past times are trout fishing and cooking. While much more accomplished in the former, I love cooking and trying new recipes. I have never tried this rather simple recipe, similar to a arroz con pollo until now. Delicious recipe for what I would call comfort food. Love your videos!

    I'm from Costa Rica...back home we cook and season the rice and the chicken apart..
    First we boil the chicken with all the season. .wend is done we take the boiling water and cook the rice normally like wend you cook white rice, then wend is could down we take the chicken in the big frying pot and season it like you did, and then we mix the rice..the rice will be loose and take all the juice from seasoning also...

    I make this all the time and I use all the veggies I have left over (broccoli, mushrooms, peas) whatever I have on hand. I always finish it off with some extra virgin olive oil and it's always divine!

    i'm liking the closed captions! (or maybe all your videos have them but i just happen to notice them now? ._.) in eastern Saudi Arabia there are a lot of chicken-rice dishes and every family cooks them differently, my mom stuffs the chicken with chopped and seasoned onions then sews it shut with kitchen twine, but you can probably get away without the stuffing xD
    boil the chicken whole with salt, spices, and tomato paste, when it's cooked you take the chicken out and use the soup left behind to cook the rice (you can add potatoes and carrots at this point, or any hard vegetable you like) and the chicken is fried in shallow oil just for a few minutes to give the outside a crunchy colored texture. serve it with toasted almond shreds or pine nuts if you can find them, and of course any green herb you have like parsley or green onions or frozen peas like you showed in the video, since the end result it will be mostly brown xD
    not impressive for instagram but your mouth will thank you for the flavor *_*
    the spices make a big difference, we get them pre-ground and mixed but you'll probably achieve the same taste if you use boxed Indian curry powder, as long as there is Cumin and Turmeric in the ingredients you're good!
    i'm gonna have to try your recipe, though, since it's less work and i can finally make sense of skinless boneless thigh cuts in my local supermarket!

    I just made this. I used parboiled rice, added a tbs of tomato paste and 1 cup of chickpeas. It is absolutely delicious and low cal. Thanks for sharing.

    I am from West Bengal, India. In my house we make a basic curry by first frying sliced onions followed by adding a mixture of onion,ginger and garlic mast mixed with some chilli powder, tumeric, cumin powder,salt and a tiny bit of sugar. Fry it for a while and add some tomato puree. Once the oil starts to seperate, we add in the chicken(with bones) and cook it for a further 5-10 mins. Next we add in the rice along with some whole garam masala(green cardamom, cloves and cinnamon). After mixing it properly an appropriate amount of water is added and the mixture is covered and cooked in a slow flame till the rice is cooked... :)

    I have a little trick with this. I fry whole bone-in chicken leg quarters (super-cheap) in olive oil until browned, remove, then saute onion, carrot a little sweet pepper (and potato if you are going more stew-ish), then introduce low-sodium chicken stock (usually Kitchen Essentials). I peel the skin off the chicken leg quarter, then debone. I use the bone to make stock, and return the chicken pieces to the soup. I usually add cooked rice last (from my Japanese Panasonic SR-DF181 rice cooker). At the end I add green onion and either parsley or cilantro depending upon the crowd (Asians prefer cilantro) .
    The kicker is the chicken skin. It is flaccid, and beggin for salt. Salt it up, then cut into little squares and drop into boiling oil (I like the Chinese peanut oil). Pull it out brown, and then salt again. It is literally the best snack ever (and soooo unhealthy). This should be a staple at rehab centers for those seeking to end crack/heroin addiction.
    Otherwise, the bones really do made a difference for soups and stews. If you are in a pinch, make a stock with chicken wings. Brown the outter skin, then fry some onions and add water to make stock. Even if you remove those wings later, the skin and bones made a wicked stock. I personally think you are better off using chicken wings all the way through, removing, then adding boneless, skinless chicken breasts in the end. Joe sick-pack prefers this with the killer stock and easy-to-eat chicken breasts.

    Hey boo! So I made things alittle harder on my self but just IN CASE ANYONE ONLY HAS CHICKEN WITH BONE AND SKIN on it in their fridge... this is what I did.. I did everything Laura did with her chicken! I just started cooking it alittle ahead of time then after it was done I took of the skin and shredded it!! It was delicious only thing I didn't add was cilantro 😩 and saffron.. but I swear it still came out amazing!!

    This reminds me of my favourite dish of all time, a good ole Trinidad Pelau. It's a one pot meat (any meat you like) and rice. It usually consists of stewed meat (meaning browned by cooking with either brown sugar or food browning), rice, pigeon peas (I think typically brown is used but some people also use green) and carrots for the basic because some people like to add more other veges like celery, some people add pumpkin. But it is so good!!

    I totally made this for the first time! today!
    I created my own chicken stock by boiling chicken thighs with a celery stock, garlic, and a bay leaf.
    Then I fried my long grain rice in veggie oil, till golden brown, I throw in a chopped garlic, quickly add my homemade chicken stock, add a tomato cube or two, and cook till its done!
    As a garnish, finely chopped celery leaves marinated in lemon, salt n pper!

    Hey Laura in the Caribbean we call it Paleau....almost the same but we stew our seasoned chicken first den add the rice to stew up with the chicken. When almost done cooking we add peas and carrots to finish it off. We season any meat with fresh green seasonings and leave it to marinade for a while before cooking. You should try this with lamb. It's really good.

    Here in Costa Rica we do it differently, we use shredded chicken, we use chicken stock to cook the rice, we also sometimes add sweet corn, carrots, green beans and if you like it you can add peas as well! But actually it looks very similar to ours! I can see the Spanish influence in our rice and chicken ;) Thanks Laura always loving you delicious food! :D

    My mom makes her rice with some sweet corn and peas and some chopped carrots,she also adds some turmeric before adding the veggies. It gives the rice a nice yellow color and it's delicious!

    One pot chicken and rice is a very common dish in east Africa. Although lamb or beef is more popular and flavorful. The juices from the bones incorporated in the rice is just delicious altogether. Great recipe!

    In Southeast Asia or Eastern Asia, we usually cook the rice seperately with water. Then, we stir-fried our meat and vegies until they are nice and tender ► add in the cool rice which has been already cooked before ► stir quickly, season with soy sauce, pepper ► add in an egg, scramble it with rice so the rice will have that beautiful bright yellow ► turn off the heat, add in chopped herbs like corianders or spring onions :) That's a traditional style in my country Vietnam as well as in China

    Im from the middle east and we have a dish called kabsa which is similar to your chicken and rice except I use skinless chicken (bone in for flavor) but maybe if I start using boneless chicken that would be a better idea since like you said, is easier to eat :) I use the same ingredients minus the olives and peas and i use 7 spice seasoning. My family's all time favorite dish! Thanks for sharing this recipe Laura, i always enjoy watching and sharing your vids, long time subscriber :)

    I am definitely going to try this.....the 2 ingredients that I will add to this dish is chopped celery and thyme. I'll add the chopped celery when sauteing the chicken, onion, garlic and red peppers. Then I'll add the thyme when the stock bubbles......oh not forgetting a little ground cayenne pepper for heat :)

    I am from India, and we would add a little bit of whole spices in the oil before frying chicken and would add garam masala or even cumin powder along with the other powdered spices. Please give it a try ....sure u would like it..:)

    Looks good! Instead of adding all water, we add a bottle of beer and it gives it an awesome taste! My family uses either Presidente or Corona (beer brand)

    Could deglaze with white wine for additional flavor, and rinse your rice before adding it if the dish is too starchy or sticky. As many others have mentioned - this is a technique dish that you can experiment and have fun with.
