Butter is expensive..........but you can make a white sauce/country gravy with one or two TBS of butter, melt in skillet, stir in equal amount of flour until it's smooth and thick (LOW heat because it happens fast) stir in one cup of warm milk (or more) or milk and water, or just water if that's all you have, make sure it's warm, stir till smooth and thick, salt and pepper. GREAT on potatoes and vegetables, on biscuits. Or add peas, carrots, corn, chicken, tuna, etc, etc, even some cheese, and serve on biscuits or toast. (Old Norwegian immigrant farmers of the Upper Midwest ate "creamed peas on toast" a lot. ) In any case, it's a great way to stretch a little bit of butter REALLY far. You can also use bacon grease, instead. Fry some sausage and make the gravy in it, and you have biscuits and gravy. ALSO: the other day I made split pea soup in my slow cooker, but like a goof I added twice as much water/broth as needed, so it was very, very thin. I stirred a few tablespoons of flour into a cup with about the same cold water, then stirred it into the soup, simmered for a bit, and I had a nice thick soup, instead of watery peas. Now I know that I can make almost a double batch of soup using twice the water/broth, and then stirring in water/flour. That's a bargain, and a calorie saver.
Yes! And remember, FOF….. don’t have fear of flour! 😆😆😆 Just try some baked goods, recipes. You might be pleasantly surprised ! There were times, I had to throw some baked items, in the garbage…they were that bad!!! But, the more I practiced , I was glad I stuck with it ! 😊
