The polished flat surfaces can only be achieved in on way, hold a steady position (dont change te angle) And use a fine stone.. to polish it. I would say, conpared to the blades thicness the bevel is of normal size. The only reason it looks to be this big is becouse its very well devined becouse of the single surface and high polish.
Low angles make larger edge bevels, and sharper edges, Sharpening through a progression from coarse to medium to fine to ultra fine get you the polish. I have an entire Sharpening playlist for people wanting to learn.

Most impactful paper cut I've ever made was with the center of the blade angled almost parallel to the middle of the sheet. I felt it grab the paper and flow through it.
this level of sharp has a bevel to reinforce or is this without a bevel? no bevels means surgical sharp but dull incredibly fast. vs a bevel to ensure the edge lasts.
Man I can always get my stuff hair shaving but never hair popping or very good at the crescent cutting paper stuff. Id think id manage it consider im using the worksharp precision but I think ive only manage to once do a paper towel cut with one of my knives

Yes Smith makes good stones and Sharpeners, I would recommend you get diamond plates of some kind. And kubey, Kizer and civivi all make great affordable knives

Yes and no, you can sharpen any steel to do this as long as they have a quality heat treatment, some steels are easier to make this sharp because they have qualities about them that make it more possible, and some steels that get this sharp will go dull right away, but better quality steels with good heat treatment have the ability to stay sharp much longer and hold the edge for a long time. So cheap quality steels don't have the edge stability to easily get this sharp and definitely will lose it immediately. Heat treatment and quality of the heat treatment is extremely important with any steel
Nitro V is no joke. I have and use many super steels. But there's just something spooky about nitro v when it's sharp. I've accidently tapped myself with my nitro v blade and it clean went threw my rough man hands to the bone. Where I've done the same with my magnacut and other sharp blades and cut myself yes but not like that. Nitro V is the steel the angels use for war.
man.. I wish i could afford a set of diamond stones. I have a lansky system but i want to get away from the controlled angle systems so i can do full sized knives easier. I've found with lansky that anything over 6" is a hassle because you have to move the clamp or your angle changes from front to back.
Well i finally split my first hair, but not like that! Geez! It took me a few minutes and tries for the hair to catch and shave into. I can get a knife cutting waves in phone book paper but cant seem to get it to this level. 🤷♂️
Both sides should be the same 99% of the time unless it's a chisel grind or some Japanese chef's knives have different angles on each side. But I have the same knife with the factory edge on it and it looks the same on both sides ✌🏻 Good luck
I've tested it just depends on the knife, that bess tester is not very honest though, I can fake it every time and never trust anyone's numbers because of that. I try and do mine as honest as possible and because I do I also know many that are on bs

Nitro v is good for about 220+ feet of cardboard in a one inch section of blade, so with a 3.5 inch blade around 1000 ft of cardboard, with stropping double that
But don't the sharper you go the less longer it holds an edge? Like isn't there a point where the returns are diminishing? The Polish looks great on it though.
No not necessarily, it depends on the steel as far as the bite from the edge goes, but with lower angle edges which leads to higher sharpness it actually increases the steels edge retention, the toughness goes down but retention goes up

Polished is using gunny juice on a strop and sharpness that strop can help

Just got my Venev stones centaur, and OMG 😱 they are amazing!! By time I was up to 800 grit it was dam near a mirror edge. Couldn’t believe it.

Civivi is my most recommended to learn Sharpening on, I think your just not spending enough time. Be patient and follow the grit pattern and burr

It's a midgrade steel with good edge retention, it's similar to 14c28n or 154cm edge retention.
