Temperance is defined as moderation or voluntary self-restraint.
The Greek definition of temperance translates to “moderation in action, thought, or feeling; restraint." Temperance is a major Athenian virtue, as advocated by Plato; self-restraint is one of his four core virtues of the ideal city, and echoed by Aristotle. According to Aristotle, “temperance is a mean with regard to pleasures”.

"If you are neutral in situations of injustice, you have chosen the side of the oppressor. If an elephant has its foot on the tail of a mouse and you say that you are neutral, the mouse will not appreciate your neutrality." - Desmond Tutu

Sir actual quote is this. Kennedy's favorite quotations, which he attributed to Dante, was that “The hottest places in Hell are reserved for those who in time of moral crisis preserve their neutrality.”

Small correction, irascible is just the opposite of unirritable. Irascible = having or showing a tendency to be easily angered. That is irritable.
