- Easter weekend is nearing closer and closer, and Jemma is back with a recipe that combines the two worlds of Hot Cross Buns and Cinnamon Rolls, to create, Hot Cross Bun Rolls. Packed full of spiced butteriness, juicy fruits and a beautiful tear and share dough, these are the ideal Easter Weekend bake.
HOT CROSS ROLLS
345g Strong white bread flour
1 ½ tsp Mixed spice
½ tsp Cinnamon
60g Caster sugar
1 tsp Sea salt
7g Instant/easy yeast (1 ½ tsp)
120g Water
60g Whole milk
45g Unsalted butter
1 Egg
175g Mixed Dried Fruit
FILLING
70g Soft unsalted butter
2 tsp Cinnamon
1 tsp Mixed spice
60g Light soft brown sugar
GLAZE
50-75g Apricot jam, warmed
CREAM CHEESE ICING
55g Cream cheese (room temp)
15g Soft unsalted butter
½ tsp Vanilla extract
pinch Sea salt
125g Icing sugar, sifted

YUMMY, such good timing as I was just searching for a hot cross bun recipe, I will be making the bun/roll version for myself. but my parents are in their 80's so they want the bun version.. Will the recipe work for the bun version as well?
Really want to give these a go but I don't have a stand mixer. I do have a food processor that has dough blades will that be able to start it and then kneed by hand for a bit longer?

What sized tim did you use 9x9 (23cmx23) or 10x10 (25cmx25cm)?
Do you think it's possible to make the dough part successfully by hand( I don't have a stand mixer😢)? They look absolutely delicious💜
I would guess it's possible. It will just take some work i e kneading. I don't own a stand mixer as well and I make all kinds of yeasted doughs on a regular basis.
This dough seems to be quite sticky and those are usually tricky to work with because of the temptation to put in more flour to make it workable. Try to avoid that as much as possible because it would result in a tough baked good instead of fluffy and plushy goodness.
I would use a wooden spoon in the beginning and switch to hands once the dough sort of comes together. Also, I would put in the egg together with the other liquid ingredients because it's quite difficult to mix through later. For incorporating the fruit, I would switch to the counter and work them in in batches.

Just made these and feel like my dough was initially quite wet and i did have to add a bit of flour in the kneading process to get it springy and smooth. is that because i used plain flour? or maybe i stuffed up the recipe? Or is that normal? haha

In the states we have less than acceptable mixed fruit, so I do the following: Divide total weight by 19 to get 1 part, then:
1 part chopped lemon peel
1 part chopped orange peel
4 parts currants
4 parts glacé cherries (halved or quartered depending on bake)
9 parts sultanas (can divide between raisins and golden raisins)
Example:
175 g mixed dried fruit for buns
9 g orange peel, chopped
9 g lemon peel, chopped
37 g currants
37 g glacé cherries, quartered
41 g seedless raisins
42 g golden raisins
This seems like it will be really sweet but at the same time I'm thinking I'm definitely making this for Easter. UPDATE: these were delicious but don’t do what I did and use all the frosting lol it gets a bit oversweet. A cross is enough. spread it around but don’t add more!
