Mayonnaise is an emulsion…a mixture of oil & egg yolk. It is easy to create an emulsion. The only thing you have to be aware of is to not add the oil to the yolk to quickly Put these ingredients into a bowl 2 egg yolks 2 Tablespoons White Vinegar 1/4 teaspoon Salt 1/4 teaspoon White Pepper Whisk until mixed Slowly add 1 cup of a clean tasting oil Using low grade Olive oil tastes harsh and using a top shelf Olive oil is so expensive. Vegetable oil works great. First use a teaspoon to add the oil while whisking. As it turn a lighter color switch to a Tablespoon. Finally slowly pour the rest of the oil into the bow while continuously whisking. That is all there is to it. You can add herbs or spices. It you add garlic it is an aioli.
