Taken from the wikia. They wear veils and the like to cover up the empty eye-sockets, so as to not creep others out.

He only used it in a video game and within the Jedi vs Sith lore guide, they probably didn't include it because the sources he used it in were kind of obscure and/or they didn't want to have viewers start thinking Jedi could all use lightning too.
