It's good to have variety on the menu, but here it seems like the chef chose to limit the menu so he can perfect his burger craft. Great review & Mahalo for bringing us along!😎👍
The burgers are just a part of the overall menu. It does seem more and more common that bakeries dabble in burgers these days as we have come across a few. Usually with really good buns👍
Those were some delicious looking buns! I'd happily use them! You and Aaron were on the same page almost the whole time. Good seasoning and a flatter patty would have boosted that final score. I'd rather have too many fries than not enough!
Paul, when you folded the paper down on your half of the fist burger I'm getting Georgia O'Keefe vibes. It's good, super messy, tiny bit of pink, it's not raw. Top burger, really enjoyable.

I hope that at least some places in japan their chips are as 2D as theirs are cause that's why there's a lot they're almost like shoe-string potatoes but the burger sounded good. I got to say i was a little shocked at how good the burgers were cause when a bakery typicaly branches out like this, the burger bun is the star of the show and not the burger meat itself. The burger meat is typicaly less than an after thought.
All this talk of wanting the "beefy" flavour in a burger got me thinking: Do you guys use worchestershire sauce in Japan? I feel like adding that to their burgers would really make them taste more like what we're familiar with.
I was thinking I had tried moose once before but maybe I'm thinking of buffalo and it was just near Moosejaw... it was a long time ago. Never had bear though...

A bit confused about the use of the ‘diaper’ in a restaurant. Why have the plate? 😂 while using it they couldn’t even put the burger down!
Usually the diaper is on the side but also pretty standard ---keeps the paws off the food and Japanese burgers can be pretty messy... ;)

Moose is very lean sometimes added with beef,and bear is gamey but tender.

Yeah, they have a lot of similar sauces here that they usually just call "sauce" ---mostly for fried foods. I would have enjoyed trying it on a burger
