Brother, Sur-e NAS must be recited at the very end of the rakat of the Salah.
surah Annas or any surah you want or some ayat from Quran
There are other guides on UA-cam, I like this one the most by the way, but those guides recite different surrahs for prayer, is that ok?
surah al-Fatiha is must to recite as it from the pillars of the prayer but the second surrah is "sunnah" you can recite any surah or any Ayat from Quran as you can , so it`s ok

In all your videos of the five prayers I've not seen reciting Subhanaka before Ta'-Awwuz! Why?
it`s name opening duaa and it`s Sunnah which mean not must to recite and if you recite it get rewards from allah and if leave it not punish on you

do you mean "Istiftah Dua'a" if you mean that , it`s Sunnah you can say it or not as you like and the prayer is correct without it
