You cheer me up every single time I watch one of your videos and speaking as a downtrodden Irish woman I have to say you have made a great job of that bread and I’ll definitely be trying your method of scoring the bread from now on or as us Irish call it letting the devil out. 😂
I make soda bread just about every week and it is so versatile. My go-to recipe does call for 2tbl of solid fat/butter. I'll experiment next time without the fat to see the texture change. Toasted soda bread is lovely and crunchy. Perhaps if Trauma Bear had just had a nice plate of buttered, toasted soda bread and a cup of strong, sweet tea after the intrusion he would have been able to remain in his childhood home. Chef, would you ever do a video on sensible home care for cooking knives?
I'm sure your go to recipe is fine. I used to make it with butter too but an original soda bread recipe probably would not have had butter because of the expense way back when, so I left it out of my plain recipe video and because of the fat from the cheese it's not required here either I don't think. Regarding the knife sharpening, I have a WMF knife sharpener that works great but I'm not really an expert in this area to be honest. Some people insist on a stone or both but for me the sharpener works great on its own. Sorry I couldn't be more help in this area but there are lots of chefs on YT who explain this better than I could xx
