Hello sir. Watched your video after changing out my leaf springs as well. I changed out the single leaf too but with a 4 leaf and noticed my trailer sits quite lower than was. Did you notice this as well or should i get a 3 leaf instead?
There aren't publish spring rates to make a good comparison on paper, but I have not experienced any dramatic responses. Put about 400mi on the new springs so far.

I didn't notice any change in ride height for mine. What load rating did you get?
The springs are rated for 3500 well above the boat weight

Did new or stiffer travel rate of those 3 leaf's make your trailer bounce the tires off the road?
