In Europe we don't always cook bacon until it is crispy, we also "sweat" bacon to produce the moisture/fat for menus such as Spaghetti Carbonara, cooking it until the meat is a pale pink. I agree that it was chives added to the potatoes. Green or Spring Onion is much bigger. I'm unfortunately allergic to onions and Spring onions (but not garlic, chives or leeks for some reason), so I use leeks instead of onions for my recipes, which works well, for anyone else with the same problem.
In the first recipe, From the perspective of an American, that bacon is still raw. We cook bacon until it is crispy. I would never eat this. The third recipe the bacon looks much better. Also, it looks like chives you cut up and added to the potatoes, not green onion which are much bigger.
