    Just want to share the reason why keto recipes is that coconut flour and almond flour can't be substituted 1 for 1 in recipes as coconut flour holds a LOT of water compared to almond flour and coconut is more dense. However when paired together, they make a better texture, density and consistency that more people often find more pleasurable

    4:04 as long as you havent added egg yet you can always re micowave the cheese witht he almond flour mix. Some times it just needs to be hotter...

    I’ve tried several “keto friendly” sweet treat recipes and they’ve all been major failures. I made these for myself and my husband and they were delicious!! They’re not necessarily a sweet treat but I added Lily’s dark chocolate chips and they gave it the sweetness I was looking for. Thank you for all your keto recipes, I’m a big fan!!

    Dave, you are stacking my recipe pile higher than I can keep up with, but I'm not complaining!
    Almond flour + coconut flour + psyllium husk and other ingredients makes the dough consistency more like "normal" pastries & cakes.

      So, how would you do that, just split up the original amount of almond flour into three equal amounts of almond flour, coconut flour and psyllium husk? That would seem like an awful lot of psyllium husk. What other ingredients would you recommend?

      @@roberthoffman9426 the amounts differ for various recipes of pastries/breads. I'm not a Chef, I've just followed enough keto recipes over the years to have learned to not try just using almond flour only as was the trend 5y ago. This recipe is a good example and Dave asked the question of why. Check Keto Upgrade, she's a pastry chef who bakes keto.

    Coconut flour is add to almond flour in small amount to improve texture. You can also cook with only coconut flour but that’s a different science 😊

      The coconut flour will absorb moisture where almond flour does not. Also, if you wet your hands or utensil with drops of water dough won't stick. Love your channel. How about using a tortilla press to level and then shape? Just a thought.

    I loooove danishes. Haven’t had one since being diagnosed with type 2 diabetes. I love that these are individual because it’s just my husband and I now, and I only bake keto for myself. And if you have a Costco near you, do yourself a favour Dave, buy a large bottle of vanilla there. Those little itty bitty bottles of vanilla don’t last long. They start adding up cost wise after a while. I used to make my own vanilla, but not baking like I used to. Costco vanilla is actually quite good.

    Dave - on your cheese, if you buy the block cheese you’ll get less carbs overall. That’s because shredded cheese has cellulose (think wood block) coating each piece to prevent the cheese from sticking to each other. It sometimes also makes it harder to melt the cheese. Plus it’s a better value.

    Thank you for sharing! I also enjoy pastries and danishes!
    It is almost impossible to duplicate them. Disclaimer: I am not a doctor, but I recently have learned that freezing breads, freezing or refrigerating 24 hours cooked rice, cooked pastas, thing’s gluten… reduces the glutens 20% - 40% and plus 14% more on toasted bread! I have noticed my body has not had as much of a negative reaction to these gluten foods when preparing this way! I do this all the time now. God bless you!

    I have seen danish with a swirl on top. So maybe a confectioner sugar frosting swirl type of thing will give it the sweetness it needs

    You could always make an icing/glaze to drizzle back & forth over the cooled danish. That's what I do when something turns out less sweet than I'd like~ plus, many a danish actually does have that icing drizzle, so there you go. =) Great post Dave~ thanks.

    Dave, you ought to check out Carob powder or carob chips to use for your chocolate. It’s naturally sweet. No oxalates (like cocoa/cocao) and it actually helps insulin sensitivity.
    For your chocolate recipes that is.
    Love your channel. Can’t use almond flour (again due to oxalates; I have CKD) but love your videos anyway! 🤗

    I've made a very similar recipe to these before with blueberries. You can also add a little sugar-free strawberry jam on top of the cream cheese. I'm not keto, so I'm not as strict on carb count, but I do low carb when I can.

      I use Sucralose so I’m thinking just a few drops mixed in with the Allulose etc would give the needed sweetness. Also, what if you use some lemon juice or flavoring? No sugar added jam etc I am going to make these with my add-ins I mentioned and see how they turn out.
      You had me laughing at the comment about your great grandpa possibly being Danish. I love your sense of humor-never boring or cut & dry with all your humor add-ins.

    I like them sweet too. At the Bakery they've got a glaze on them, so maybe mixing a bit of cream, some sweetener, & then brushing the crust with that would tip the sweetness up a bit... just a thought 🤔🤷🏼‍♀️

    Thanks! Yes, Erythritol is sweeter and will also provide some crispness compared to Allulose. Allulose holds moisture so it will be softer and more moist.

    On the filling try about a 1/2- 1t ish of almond extract / flavoring, it may inhance the flavor . I can’t really comment on the erythritol , I have used it a couple of times awhile ago but have decided not to use it because I have dogs and it is leathal if they injest it. when I use an alternative i use Splenda or stevia. Just a personal choice. Thank you for sharing your adventures with cooking / baking keto. It always seems fun and looks fairly easy. ❤

    Allulose takes quite a bit more to sweeten. Plus it can over brown in baked goods. A blend might work better.

    Hi Dave, first time responding to one of your videos. I have this sweetener mix that I name up and keep ready for my recipe’s. No odd after taste of faux sweetened taste. I found this on another site. I’m sorry I can’t remember where it was. Here it is…..
    Weight measurements -
    16 oz. xylitol
    12 oz erythritol
    2 teaspoons stevia
    Cup measurements -
    2 cups plus 2 tablespoons xylitol
    1 1/2 cups 2 tablespoons erythritol
    2 teaspoons stevia
    I mix this up and keep it in a canister in my pantry.

    Nice recipe maybe add fruit with the cheese mixed in like a cherry cheese or blueberry cheese and allulose sometimes not sweet enough but I like the simplicity Good video Dave....Julianna NC

    Dave on a helpful note, instead of using your hands to flatten the dough, you can use another piece of parchment paper on the top to flatten, or put oil on your hands, works very well. 😊

    Dave i too find recipes for desserts aren't as sweet as i like so i always add drops of liquid splenda (up to 20 for a 9x9 pan of fudge for example). Some people taste my desserts and think it is too sweet but i like it that way.

    Dave just wanted to let you and your viewers know that Erythritol has been implicated in blood clot formation and therefore increases the risk for heart attack or stroke. I have tried to avoid it anyway since it gives me uncomfortable abdominal gas. I liked the Adkins candy bars which contained it but it just wasn't worth the discomfort. Everyone is free to make their own decisions about sweeteners of course but just wanted folks to know about the new info about it. I may try your Danish recipe but might make some kind of raspberry compote for the top.😊

      In very high doses it can be harmful if you have a comorbidity in that area. If anyone is eating that much "sugar" it's not helping anything no matter what the sweetener is.

      I'd also like to address that: that particular study doesn't have enough data to prove either way. As per the true scientific method. Much more studies need to be done properly to actually make a definitive answer either for or against. Thank you for sharing but the information isn't ready yet.

      I've always wanted to know how to do this because I don't have a problem w/ occasional wheat. The recipe calls for 2 cups almond flour, so just replace one cup with vital wheat gluten? Thank you!

    I must be messing up on my recipes. I have been using the almond flour and everything comes out so dense and heavy. It sits in my stomach like a rock. Plus it is so expensive. I think the 1 lb bag I have was $10. That's crazy!

    Allulose is only 70% as sweet as sugar so use more allulose.

    Could you use your mixer to put that together? I’m not sticking on hands in royal eggs I’m sorry yuck.😂😂😂. I made egg salad last night for supper instead of mayo are used cottage cheese and I put the whole mess in the blender ninja like that only the smaller one didn’t work very well but hey, you couldn’t tell it was cottage cheese. And it was good.

    I am a diabetic, how many total carbs are in it? Net carbs do me no good, I still get a sugar spike even with little to no net carbs if the total carbs are high. The allulose and fiber do not immediately cancel out the carbs. That happens over time. During the interim for many blood sugar can spike. For those recipes based on net carbs with a much higher total carbs, people on an intermittent keto diet. They just don't realize it because it comes down before they check their sugar. Probably won't drop you out of keto, but if your A1C is borderline it might. Something to think about. Most nutritionists will tell you to go by net carbs but most doctors will tell you to track total carbs. Just something to think about and in the end you have to decide for yourself what is best. All most all recipes on youtube only tell you the net carbs due to being keto, they don't take into account diabetics and it is so depressing.

      For context, I can eat a keto grain free protein cereal for breakfast(Magicspoon: it has 15 total carbs but only 4 net carbs) and my blood sugar will spike for a couple of hours and then slowly drop over the third hour. So for some it's total carbs needed, like me. Little hint to you keto folks out there, drink black coffee with your breakfast and drink about 6 to 8 oz of water midway through the meal. The two things make a difference on how fast my blood sugar comes down afterward and tends to be more filling.

    Why use a thumbnail that is not what was made?
    I genuinely don't mean to be rude. I think you make great dishes, but its deceiving to use an image with a dough that is almost impossible to make as keto dough.

    These don't look anything like the photo in your thumbnail. I notice none of your recipes do. Are you using other people's photos or AI generated images for your thumbnails? It seems dishonest.
