    “What happens when you despise what you do…?” I loved to cook so I went into the culinary industry. Worked ten years, made it to sous chef, despised cooking. Now I’m in physician assistant school and cook more than ever. The passion is back!

      @@seofutbol i can relate. Spent almost more time in kitchens then most. And do not for a second regret leaving that life. Fastest way to hate food and cooking… become a chef. 25 years. Now that i’ve said goodbye to kitchen work i love to cook again. My wife loves it too.

Cos oh boy do I have _decades_ of stories for *you.* I cooked in 3 countries across 2 continents and it's the *SAME EVERYWHERE.* I mean you're clearly here just to spout "something something Americans lmao" but let's break it down anyway. What is a passion for cooking? It's a passion for the senses, the aesthetic, the creativity, the endless learning and the sense of satisfaction. Translate that to a *professional* environment with competition, ego, money as an objective, someone else's menu, set schedules and dissociation from the customer - wow we've just stripped away everything personal about cooking.
      Say we go through with it for a while, because we _really_ love to cook; we drank all the kool-aid about how we can make it to head chef and cook our own food, we have developed a bond with our co-workers and we have learned how to function in a professional kitchen - we're no longer just good at cooking we are good at _working in a kitchen._ We make it to "Sous Chef". Now our day consists of inventory, scheduling deliveries, more inventory, scheduling receivership for the used grease and organic mulch, more inventory, checking stations before service, more inventory, calling the board during service, more inventory, AND IF YOU'RE REALLY LUCKY, A PREP COOK MIGHT NOT SHOW UP FOR HIS SHIFT AND YOU GET TO TOUCH SOME FOOD. For an hour or so. Then it's back to inventory.
      The disconnect between the passion and the industry is not the fault of young cooks. You can hardly blame them for wanting to do something professionally that they already have a passion for. The fault lies with the writhing, bloated sack of corruption and bullshit that wears the face of an art-form when in reality it is a soulless, corporate machine like any other (you just work twice as hard as regular wage slaves).

    dad has been in the food bussiness 30+ years, it was tough because he wasnt the best english speaker and NYC was a very savage place in the late 80's. I grew up looking up to him, one day he asked me what i wanted to be when i grew up..i said just like him and his heart just went sideways because today i see what he went through. Food business is tough whether its a startup cost/wasting, employees or even just rude people who you can never satisfy. I love to cook as a passion but nyc has drove me away from wanting to own my own restaurant but, who knows maybe one day.

    There is no money to be made in the middle in the restaurant industry. You either go high end, or massive scale franchise style, the middle ones always lose.

    lol I opened my Deli 3 months before the pandemic. we are still kicking but it's been a struggle. I am happy making people smile with my work and ideas though.

    No, People mostly fail because they turn their art into a business but they don’t turn their business into an art. I’ve seem so many people lose every penny because they thought their passion for cooking was enough to run a business.

      @@Monkeypole Anti-social work hours too. It's hard work, I love food but it's completely different in a commercial setting. I have a wage but I can't go out or do anything because I'm working when most people are going out. It's definitely better than sitting in an office having to be pc all the time and I don't have to deal with customers but fuck, I'd love to have my weekends back.

    Start a "restaurant" in your backyard Friday and Saturday night only. Then as your name gets out there and you get more customers, you can grow to a food truck. Them from there you can grow to a restaurant. Restaurant doesn't have to be big. It can be a drive up only. Go for it!!!

    I've been in restaurants for 24 years now I turn 40 this year. Even the pandemic won't stop people from coming in especially now. As a server I work 4 nights a week and can comfortably be where I need to be.

    You're speaking the truth! My mother ran kitchens with stars, even ran a bakery for a while, she taught me the value of working for someone else when It came to restaurants, etc. She's in her late 70's now, we joked the other day that the best option to make money is to be on UA-cam or Tiktok as a foodie, not that it's easy, just easier than owning all the debt, plus you get to cook what you want/enjoy

    Truth. Owned a restaurant for 14 years that made a modest 2 million a year take home eoy was like 150, split that with my partner and it's 75. Now 75 isn't bad but when that restaurant needs ANYTHING is come out of your pockets.. oven break? Delivery car transmission went out? Cool/freezer goes down over a holiday causing total cold inventory loss? Employee breaks in over night and cleans out the safe? All if these things have happened to me. In the end I lost it to a fire and while insurance helped I was left with debit, and had to claim bankruptcy. I now make 75k yr running a Truckstop 3 weeks vacation, quarterly bonus 5 day work weeks, 8 hours a day.. would never in my life put myself back through that. American dream can easily become the American nightmare.

    I used to cook and decided to open a Cafe fast forward 3 years later closed the door gained almost 70 pounds felt like I had an elephant on my chest. I grew to despised cooking. Many years later i have been growing to love it again cooking for my family. My wife has asked me if I would ever want to open up another place I said a busniess yes a food industry busniess no. I don't even cook professionally anymore. But seeing the faces of the people you care about light up when you make something delicious even when it's a simple homemade mashpotatos is such a great feeling. So to Senpai Kai smart decision do what you doing now if you happy doing it.

    That is true. My mom runs a small restaurant in Oregon. Its a teriyaki shop. When she first opened it back in 2018 she was working 7days a week 10 hours a day. She is in her early 60's. Now she works 6 days a week and works lesser hours and luckily she was employees now

    this is what I wish everyone knew before they asked me if Id want to own a restaurant or even be a chef. Id rather just be a line cook at this point. Ive had several family members entertain the idea of having a family restaurant. But I think anyone who wants a restaurant should watch kitchen nightmares and read kitchen confidential and then talk to me.

    totaly true. Our restaurant makes almost no returns on the food. But on the drinks... Hot damn, we sell so much beer its insane. It also helps for extra tip money since in the netherlands tips are not required. So people mostly do give us tips because they are drunk and feel generous haha. so on top of a really good minimum wage we get like 2-8 euro's an hour extra (heavily depends on the night you work).

    As a chef I totally agree if we are talking about “mainstream” restaurant with a set menu (I mean by that, that the menu is always the same). In France here We have a lot of small restaurant 10/20 seat. And the menu is never the same everyday, it’s the chef decision. I think the real problem is doing the same thing over and over again.
    So my advice is opening a small restaurant and having the liberty of making new dishes and experimenting things 😃. It is more expensive for the customer but it is special dishes and made with passion and love.

    This applies to most businesses that are starting up, especially restaurants. Easy to get into but a lot of competition already exists. Need a lot of capital from yourself or investors to operate comfortably for the first few years

    This is so true. I grew up in a family restaurant. I'm thankful because it taught me two things. One was how to cook really well and the other is that I never want to be a chef for people outside of my immediate family. 😂 Not only do you work from 5am to 10pm on average, longer during the weekends and on prep nights. But you have to deal with pretentious people, or at least I did. My parents had a restaurant near a private golf resort, you could only imagine the levels of Karen we got😂 and I have my grandad's Scottish temperament, so you can see where this is going probably. One morning a particular Karen had me walk a raw egg on a saucer to her table and place it in front of her and I leaned in and said " I am not your maid, you asked for over easy that is what you got, you didn't say over medium and since this is your fourth request to change your egg order, you're more than welcome to come back into my kitchen and cook it yourself."
    I then turned around and went back to my kitchen. The waitress later came back and told me that it was so hard for her to keep a straight face because the look the Karen was burning into the back of my head as I walked away could have murdered someone. Needless to say I didn't have to work mornings anymore as I was apparently too grumpy. 😂

Most customers here in America have this mentality that the customer is always right, it's so annoying. I feel really bad for people who work in retail or customer service. I couldn't do it. They must have the patience of saints.

I think calling them on their shitty behaviour and embarrassing them is the best medicine for people like that. I mean I get people can have bad days, but that doesn't mean you can take it out on someone else.

    A few friends of mine who opened cafes or restaurants failed miserably. Spoilage, staff issues, declining foot traffic, costs to build up a brand all mounted to huge losses around the 2nd to 3rd year.

    The last restaurant I worked at was a Hungarian restaurant owned by a Hungarian chef. We had a fire in my hometown which forced us to close for over 2 weeks.
    2 months later covid hits, our restaurant was in a hotel so we were one of the first places to close in our town.
    You could see my boss hair turn white through it all. Racked up over 100k in debt and had to sell the restaurant.
    I'm from the same town where Guy Fieri is from. Guy even offered to try to help keep the restaurant alive but my chef was burnt out. The chef does farmers markets still but he's now mostly occupied with his backyard farm and chickens.

      Anywhere that you get paid a wage and don't rely on tips. Of course, there's bad offers and good offers, but servers in Europe have been making good money. Even here in the Balkans, where it's always worse than Central Europe. Just gotta find a good place with a good owner and stay away from the restaurants on the beaches, they work you like a slave there in the summer season. Then it's smooth sailing.

      @@darkySp yeah that makes sense. Here in the US being a waiter is a minumum wage or below minimum wage job and its nothing but that. The reason it can be below minimum wage is because If you are able to collect tips employeers are allowed to pay you less than the minimum wage so I know alot of severs that make around $4-5 dollars an hour excluding tips which is astonishing appalling in today. The US is actually a pretty poor country surprisingly when it comes to wages😅 especially with the food service industry and restaurants. They are the absolute worst.

    I feel the same way, I wanted to go into this industry mainly as a gateway to travel around the world and learn about different cultures and owning a restaurant was never on my radar. I think most people assume that if you want a career in this industry, you have to become a chef or restaurant/business owner but I think its completely fine if you dont want to take that route.

    I totally agree with you. I owned a pizza shop in the late 80's and I never worked less than 120 hrs a week. No one seems to understand why I don't want to go back to that.

    I own a music school. High rents almost put me out of business. The IRS is still after me. Only pure luck (maybe divine intervention) allowed me to relocate and stay in business.
    And yes - very often a commercial lease is really a deal with the devil.

    There are different routes to acquiring restaurant start small get bigger. I know so many family restaurants that started from a food truck.

    I think you’re focusing on all the bad stuff .. there’s plenty of upside in food business... unless you plan on opening a michlien star. If not you can literally get a food truck ... if you’re reading this don’t give up on your dreams of owning one day

      Even starting a street food business can do well if you know what is delicious and fun to eat in the area.
      Especially if you don’t plan on starting a restaurant with big inventory that will obviously make you stress.
      Starting in small inventory is the smarter choice.
      But I guess some people (or most) think there is no other option but to start with big inventory

    My cousin is a chef.. he makes more money then most ppl in our family he gets paid really well.. he works so much though! We hardly see him anymore! Still proud of him regardless 😊😊 he took a chance on something different

    I wanted to be a cook when i was a teenager, no experience whatsoever and i still managed to grab a cook job at a restaurant and honestly after seeing how fast it run in a kitchen and not managing to keep up with it and learning the menu. That kinda gave me a cold shower. I sure still like cooking for myself, friend and family though and it's much less stressful lol.

    not even just that you always get characters that either try to hold your restaurant hostage with yelp, order something and demand they ordered something different, get mad when they had to wait 15 minutes when you gave them a 30 minute wait time for walk ins, etc.
