You can mute it by hitting the ukelele (not hard) without strumming any strings

Hey man, I am really bad with explaining strumming patterns :D but pretty much it is something like
d u D u d u D u
where the big D is a loud down strum and the small letters are either quieter strums or chucks.

Capitol means to stress or strum harder.

I think proper credit should be given to the individual who actually wrote 'Red, Red Wine'. It was NOT UB40. It was Neil Diamond and he wrote it in 1967. A little research prior to recording your video, perhaps.
