i cant explain it, but i started smelling something when you sliced open that bird. a gorgeous smell of smoked meat. maybe one of the neighbors is watching your video and teasing the neighborhood.

Thanks Willie this is why I was up at 4:30 driving from the sticks to Walmart which is about a 30min drive and searching there Meat dept looking for a Turkey any Turkey January 12th but,after all the rigamorow like SI says Hey that's a killer bird Jack!!!! I substituted the Crawfish with thinly sliced smoked brisket I need a lil practice on my Cornbread GOD Rest her Soul my Grandma's was the Best a lil bacon and If I caught her in time slip some cheddar thanks man it was a good day!!!!

Great looking Turkey. Crawfish and andoui sausage in the stuffing was genius. How funny would it be if at the end of this video you pulled the turkey off the grill and told everyone to throw the turkey away and eat the cheesecloth.

Thanks for the inspirations. I bought a turkey for Christmas; and, my thought for it was to put mustard and Duck Commander spice like in your deep fried turkey; and, then smoke it in my electric Masterbuilt smoker. Still trying to decide on the type of wood. What would you recommend?
Forgot to mention, the turkey came out AWESOME!!!! I used Apple Wood smoke; and, I ended up smoking it for 17 hours; but, by chance, on Christmas Eve Eve, family bought a roast to make Kahlua Pork and cut about a 1/2' thick layer of fat off the roast; before, roasting it. I put that 1/2" thick fat right on top of the turkey breast and wings. OMG, it was AWESOME!!!!! It was by chance I took advantage of that; but, I was told by everybody - BEST Turkey they've ever had in their lives :-)
Why do louisianians love onions, bell peppers and celery soo much?? That’s all I ever hear them putting in there dish when it has vegetables. Someone please enlighten me and tell me why they seem to love those 3 vegetables soo much and only use those???

So 165 is the magic # for temperature? Looks great.
No. That's too high. I'd pull it at 145. If you wait until it's at 165 on the grill, it'll raise up to 175 or 180, making everything dry.
