Fun Fact: San has actually been confirmed by Michael Dougherty to be reckless to the point that his head would come off multiple times, because of this San learned how to grow back his head quicker than Ichi or Ni can.

According to GvK novelisation, one of the three heads of Ghidorah was in mechagodzilla, that's why he was able to put up such a good fight. So, I think Ghidorah won't fight mechagodzilla, cause a part of his own body is inside it.

if you just think about it, godzilla was already exhausted from his fight with kong so he wasn’t at full strength fighting mecha godzilla
Gidorah if one of the heads dies it comes back from the dead but if it's cracked it can not come back to life because Kevin got his head ripped entirely off by the G man so when it's dead it's conscious still exists and when Kevin got his head ripped off in a few seconds the head regrew
