Just finished making my chicken sausage for this year, chicken cordon bleu and chicken potsticker using the recipe earlier this month. I love gumbo and now I might have to make this and add this to my next batch of sausages next month
Man, you stole my recipe! I also made Gnerals Tso's sausage and a Thanksgiving sausage with stuffing and gravy. I love to see people exploring different combinations when making sausage. The possibilities are endless! Great video!
I love to make homemade Gumbo and Jambalaya. Those sausages look great and sound delicious, going on my list of to-do's. Would love to use this sausage in a pot of red beans.

Can you make it 50/50 Boudin/Fresh style with a cooked Andouille sausage and raw chicken? Would that give a more authentic Gumbo feel and flavor? Or is that even possible? Keep up the good work. I get a lot out of your videos.
This looks unreal, I love gumbo, when you make this again, would you do anything different, or is it perfect the way it is? I have to make this, I think almost every sausage in season 5 have been amazing.
I thought it was perfect the way it was. Someone suggested adding rice and although that would be neat, I don't think I would do it in my next batch. This sausage the way the recipe is written literally tastes like a bowl of gumbo, it was awesome!!

Its funny, its always non Louisiana natives that try to lecture me a native about okra. I've found over the years that its more preference than law. My grandma did not like okra in gumbo but would smother some on the side for the people who want it

And that big ligament in the chicken breast as well. You never say to remove any of these in the videos.

I wonder if you used a dry roux as the binder (baked dark flour), if it would up the gumbo background? In place of the potato starch.
