      Pitchy Blaq Thyme doesn't have a twi name. You will find it the market as Thyme

    Thank you for this great video. I have trouble with jollof because of the water ratios. Your recipe doesn’t say how much water to add when mixing in the rice. Is it possible for you to measure and respond?

      Mercy M sorry about that. Usually it depends on how many cups of rice you’re using. And also because of the stew you do not need a lot of water. So the ratio should be based on the stew to the rice and then just add a little water to rise above the rice. Also some rice differ from others so you have to pay close attention to the rice to check the softness. Some rice will need more water as it boils.

      Goat meat is tough and needs more liquids and a longer time to cook

      You can add a pinch of baking soda (or potash) if it’s acidic
