it's called a "Love bone" in German (Liebesknochen) - the same dough is also used to make "Windbeutel" - filled airbags - filled with whipped cream! A great favorite here. The English designation is choux pastry and is known for leaving big spaces within the dough absolutely intended to be filled with yummy fillings!
I don't know what it is called, but it certainly isn't choux pastry, neither in England or anywhere else. Choux pastry is cooked, then the eggs are added one at the time. It is not fermented. Sorry.

In watching you make some of you recipes I catch myself saying....I remember that! Thank you for sharing and helping to bring back such lovely memories. 🥰

Her recipe adds a small amount of mashed potatoes to the dough and mix the cream cheese and powdered sugar together before spreading. I like the sprinkling the powdered as you did better and will do that next time. My ancestors immigrated to the US from Germany and the area has much German influence still today.

I was thinking cream cheese with the powder sugar would be a nice substitution for the sour cream.

Reminds me of Swedish coffee bread -- except the local Swedes use a filling of sugar and cinnamon and nuts (and they season the bread with cardamom).
Me too, German Bee stings is made as cake. Sliced in the middle of the height and filling added almonds usually
