You can use cranberry juice or just beef stock instead of wine. Yes, you can cook it on the stove, just turn it to the lowest you can and stir with a wooden spoon occasionally

What kind of red wine do you use? Cabernet, Merlot, something else.. or does literally any red wine work for cooking? I never use wine to cook so when a recipe calls for red or white wine, I never know what kind to use lol

As a dutch person this is almost exactly the same recipe as grandma taught me 😊. The only difference is we use beer instead of wine and instead of adding peas we serve the stew with pickled red cabbage.

I made a batch today in my brand new dutch oven. It was absolutely delicious!! Added mushrooms to my ingredients. My only issue is the sticking @ the bottom of the dutch oven.🙁 The stirring helped some but...Any tips??
That`s why I prefer cooking in the oven, it cooks more evenly and never burns the bottom. If you cook on the stove, maybe use less flour and turn the heat really low. Is it enameled?

As a general rule, if it`s a dish like a stew about 0,3-0,4 lbs/150-190g meat per person is fine, if it`s a roast, 0,5-0,6 lbs/250-300g meat per person, remember meat will lose about 25-30 percent of the weight when cooked.

Oh my heck! I made this and am eating it right now! The only differences are I deglazed with 1/2 cup red wine vinegar and 1/2 cup water, I ended up needing to add an extra cup of water with bouillon before the oven step, I believe I used a little under 3 tblsp. worcestershire and then 2 five fingered pinches of salt. It's perfect!
Is that a raw or enameled Dutch oven? Can’t tell if it’s like Staub or Raw CI I ask cause you used acidic ingredients (a lot) from wine to tomato paste. Doesn’t that eat at raw seasoned cast iron, and transfer the iron flavor into the food?

It`s raw and I never had any problems using acidic ingredients, just remember to season it well after use.
