    In the beginning you used chunks of apple to get the heat up. Do you continue to use chunks or you change to logs like when you smoke brisket?

      I think I kept using chunks in this video but it gets a bit over smoked that way. Currently I use a few chunks at the start then switch to just pure charcoal

      Have you never had smoked turkey or smoked anything? It may look dark, but it's not burned and I promise you, it's delicious. This is the only way we'll do our turkey! The only thing I do differently than this guy is around every hour or so, I'll inject my turkey all over with melted butter and towards the end, instead of glazing like this guy...I continue to butter the skin. Always so tender and delicious flavor. Then we make turkey enchilada casserole with the leftovers which is...unimaginably delicious and addictive, it's traditional in our home.     Ok, glad you said " anything you cook on O J is a challenge" . I love cooking on my O J , but you can always learn, from trial, error, others, and improve on technique, tastes. The journey makes the destination even more enjoyable 😊

    Wouldn’t the foil in the beginning of the cook stop it from absorbing a lot of that smoke flavor?

    What is a good wood to use in offset smokers. Is Cherry or Hickory good

    How in the hell does foil keep the temp down cause I know anytime you put foil on anything it will cook faster. I think the foil method is bullshit man. Explain it to me better

    You do such a great job of showing how its done on a normal smoker. Not a 5K huge pit master smoker. I aint made of money so a "cheap" smoker is my only option. I've been asked to smoke a turkey this year and I dont even have a smoker yet!! I did it last year on my grill and it worked great, but I'm getting a dang smoker. Oh I meant to ask what brand knives do you use? They look sick and I love it!

      I use dalstrong knives now. Used to use edge of Belgravia. What kind of smoker are you getting?

      @@SmokeTrailsBBQ I was hoping to get a Char-griller offset but I cant afford one. So I'm hoping to go with a Dyna-Glo DGSS1382VCS. Don't got a lot of money so if I can't get one I'll just have to save up longer.

      Man , I hope you get your smoker. You will love it. I have O J and constantly learning, and enjoying great food. Got it from lowes, at one time they seemed to be a shortage or on backorder.

      @@g.choppa4448 I did get it!! She snuck and ordered it and wow!!! She bought it as my Christmas present.... even though its so she doesnt have to cook the turkey and make me do it. lol. I now have a Dyna-Glo wide offset.

    Thank you for providing this video. I just got an offset smoker like yours and used it for the first time to smoke ribs and wings for Labor Day. I’ve been bitten by the smoke bug and want to smoke a Turkey for Thanksgiving. I originally wanted to smoke 2 small 14 lb turkeys but they only had 19 lb plus at the store. I bought a 23.5 lb turkey plus a whole turkey breast. They are both frozen and are thawing in the fridge right now. I will brine them. My question to you is, when should I start smoking the turkey for it to be ready for dinner at 5 p.m.? Thanks in advance.

    How big was this bird? I am doing a 15lb one tomorrow, and all I'm seeing is 30min per lb...guessing yours was smaller? Should I still be looking at 45 minutes to check for breast/thigh temp alignment? Rotating/spritzing every 2 hours? And I guess I will wait til the last hour before glazing...

      I recommend using a charcoal basket. It was a game changer for me and my ok Joe's reverse flow

    Looks like the smoke may have been dark and out of control. The smoke should be grayish or clear looking. These smokers are made to be ran with wood chunks. Otherwise nice turkey

      Thanks Preston glad it helped. Keep that fire burning hot and clean with thin blue smoke. Also one thing I should have mentioned is you can cover the whole bird with foil if it's getting to dark for your taste.

      Never tried it but pretty much. The difference is the heat comes from below on an electric.
