you guys should do a track swap: basically everyone starts making a track, then at some point, you pass your track to the next person, then again, then play the results
One thing I noticed that might help is adjusting the angle of the fans coming out of the tube so flight time isn't as long. Will help shorten the play time of the track and make for a better flow.
Maybe a no turns theme, just good control of the brakes in order to get good times, not the straight track theme, just that you dont need to use turning

I think you should put the track showcase after the multiplayer segment in your video. And you should record audio over a video pan to prevent explanations from getting too "winded".
