C/w Nana: Lao Steamed Fish in Banana Leaf (ໝົກປາ == Mok Pa)

  • Mok Pa (ໝົກປາ) is fish steamed in a banana leaf.
    INGREDIENTS
    2-3 pounds Catfish (or any fish you like)
    1/2 cup Padek (ferment fish sauce)
    Fish Sauce
    Salt
    MSG (optional)
    4-5 stalks Lemongrass, sliced
    ~12 Chili Peppers
    Sticky Rice, uncooked, soaked at least 30 minutes
    15 Shallots, sliced
    15-20 Kaffir Lime Leaves, sliced or whole
    6 Asian Eggplants, sliced
    Dill (or lemon basil or rice paddy herb)
    Banana leaves

    "Ma Der, Ma Der" means "Please come join us" in Lao language.

    Thank you so much aunt nana for up load on youtub on how to cook these varieties and wonderful traditional of our lao food. And teach our young brothers and sisters not forgeting where we coming from. Especially these days our young people seemingly to follow too many western culture and forgot how to do our forfathers ways for doing things. Like father use to say. (a good tasty food is the heart and soul of the people who made it). Unlike most western and mexican foods they just put salts and peper onit and that it.

    Euy Nana, My boyfriend is sicilian and he actually watched your larb gai video and made it on saturday night for my parents and I to try and I will tell you, it was absolutely delicious!!! It's so funny because my moms so proud and keep telling her friends at the temple she has a son in law that can cook laotian dishes lolx. He says he will be trying this mok pah next. He's watched a lot of your videos and learned a lot along with me and my mother guiding him. Keep the videos coming, great job!

    You're doing a great service to our community especially second generation lao Americans. 😂 Everytime i ask my mom how to make anything she only tells me the ingredients. She doesn't keep up with measurements. Recipe is just in her head. I made this and it was delicious. Next time I'll make mines more spicy.

    mouth… watering… my mom usually uses catfish, too, but last time she only had salmon belly in the house and it was REVOLUTIONARY. i'm going to buy all the ingredients tomorrow and make it myself.

    OMG. It was so much easier than I remembered making it with my mom years ago. I made it last weekend and stuck some in my freezer. Your ingredient were easy to find and my house did not smell like pa dek. It was so so so good. Can you do a tutorial on som puck (pickled greens or cabbage) now that I can make mok pa, have to have som puck with it. please please

    allstar904: yes, almost all 'mok' is pretty much the same. you just change the main ingredient. If you do mok chicken, you can also add the bean thread noodles.

    JokerIntegra, my 'mok gai' (steamed chicken) is the same as 'mok pa.' Just replace the fish with chicken. Also, if you have chicken innerds (egg sacks, intestines) those are good to add.

    sparklyperidot: My mom made about 20 gallons of padek that has been aged for over 8 years. It is very potent! I don't think we'll be making any padek very soon. I will surely share when or if I do it.

    They are kaffir lime leaves. It's similar to lemon leaves, but you can't use lemon leaves.. lemon leaves don't have the same aroma.

    Can I make this and freeze it? Should I freeze the steamed ones in leaves or freeze the stuff before i wrap them in leaves? What do you do?

      I usually freeze them after they have been steamed in the leaves. And re-steam or microwave when needed.

    thank you, so I soak the fish in milk for 30 minutes to get rid of the smell? do I rinse it after soaking for 30 min?

      Yes, rinse the milk off after soaking. You may not even need to soak it in milk if you think the smell is OK.

      Jet Saysa I haven't eaten enough of the Asian catfish to be able to distinguish. However, this recipe is good with any kind of fish or other meat.

      I used 3/4 cup of uncooked sticky rice. It depends how thick you like it. you can use more or less.

      I know sounds like it would be extra salty, but the they balance out with the fish and other ingredients.
