White Bean Chili - 30 min weeknight dinner & totally veggie!

White bean chili has quickly become one of my go-to weeknight dinners. This totally veggie white bean chili is so hearty and satisfying that I usually cook up a huge batch and we enjoy the leftovers over two days. Like many things, it takes even better after a night in the fridge. Hope you like this white bean chili and give it a try. Do let me know if you do!
INGREDIENTS LISTED BELOW ⬇⬇⬇
1 medium onion diced
1 can of diced tomatoes
2-3 cloves of garlic crushed
2 stalks of celery chopped
1 large carrot chopped
1 zucchini diced
1 can navy beans or beans of your choice
350g veggie ground
1 tbsp each of cumin, smoked paprika, oregano, garlic powder
1 tsp red chili flakes
salt and black pepper
2 tbsp vegetable oil
