Husband and I make a Summertime variation of that. MACARONI cooked and drained, add in canned or packet TUNA (drained very well), add in Mayo (texture to your liking) and mix the above mentioned together. Once mixed-up add in canned or frozen (thawed) GREEN PEAS... folding the Green Peas in gently so you don't crush them into the mixture. Season to taste. It was really challenging for me too when I just had a cooler. My food was constantly getting soggy. Until you get a fridge one idea is using a lot of canned foods like tuna, chicken, roast beef and even canned hash or small low cost canned ham and other shelf safe foods like rice, beans and noodles or ramen. Veggies like potatoes also last pretty well. If you are camping with other folks you can take turns preparing meals and sharing so you use up what you cook.
The zatarain's red bean is good too. I used to go to Sam's club get a rotisserie chicken get home and take two gumbo packs very inexpensive I would cook it down and add the chicken and some sausage. Zatarans beans and rice, with either no meat or whatever meat you can afford to throw in. We like sliced up smoked sausage. Hot dogs would work, so would pretty much anything else. Don't forget the hot sauce! Been making that in my family for years and years, whether money was tight or not.
