      At least peel and wash it. Onion isnt garlic, usually there is dirt between layer

    I have enough chicken thigh bones and excess skin in my freezer to fill a builders bucket. I always freeze meat cut offs and throw them out on bin day. For whatever reason I have been holding on to my chicken left overs to make a nice soup. Thank you for this easy recipe. Will definately blanche as the bones will get destroyed if roasted.

    Recently I have done this but added some more like cloves , garlic , ginger , mint , coriander ,
    But not chicken bones may be we can call it veg one and used it to basmathi to make biryani and u know man that we came out excellent I never tasted biryani like that before

    Hello Chef. I love your recipes. I have a doubt with this one. Why do we throw away the water that was used in the blanching process? Won’t that get rid of some amount of flavour from the chicken ?

    That's basically how I make it, except I do not throw away the first water, I just collect the impurities on the surface and continue cooking. It still turns out clean.

    Id' wash ALL my produce Before I cut and throw into the pot, and on a gentle simmer for 3hours with the roasted bones. freeze over night on a narrow tray then cut and package a largish square and use tine foil to protect and store in the freezer for months.

      GrEg D'cunha you can make a lighter stock and you can use it instead of water in your next stock
