Disney Springs Food Series: Gideon’s Bakehouse Banana Bread Chocolate Chip Cookie

  • A NEW SERIES? Absolutely! I am ecstatic to kick off my Disney Springs Food Series over at Gideon’s Bakehouse.
    Today we will venture into the quirky world that Gideon’s Bakehouse has set forth to make the Banana Bread Chocolate Chip cookie. This 1/2 lb. cookie is packed with Ghirardelli milk chocolate chips, semi sweet chocolate chips, banana chips and glazed pecans. This treat will tantalize your taste buds and is PERFECT for sharing.
    Gideon’s Bakehouse is a spooky fan favorite location in the Landing section of Disney Springs. It has graced our presence now since January 2021. Known for its gourmet 20-hour XL Cookies, delicious cake slices, famous nitro cold brew and popular “cookie hour”, Gideon’s has been delighting guests for years.
    Ingredients:
    1 1/3 cup All Purpose Flour
    1/2 cup Cake Flour
    1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Kosher Salt
    1/2 cup Light Brown Sugar
    1/4 cup Granulated Sugar
    1 Egg
    1 Egg Yolk
    1 Banana, mashed
    1 tsp Vanilla Extract
    1-2 drops Concentrated Banana Extract, optional
    1 cup Ghirardelli Milk Chocolate Chips, divided
    1 cup Semi-Sweet Chocolate Chips, divided
    1 cup Banana Chips, divided
    1 cup Candied Pecans, divided
    Method:
    - In a large bowl with a whisk, combine all purpose flour, cake flour, baking powder, baking soda and salt. Set aside.
    - Using a stand mixer fit with a paddle attachment, beat together sugars and cubed butter, for 5-7 minutes on medium-high speed. Pause the mixer to scrape down the sides of the bowl every few minutes.
    - Add eggs, vanilla extract, banana extract and mashed banana to your stand mixer, beating on low and increasing the speed to medium for 2-3 minutes.
    - Adding the dry ingredients in three portions, set the mixer on low and incorporate in batches, scraping down the sides in between additions.
    - Keeping the mixer on low, 1/2 of your milk chocolate chips, semi-sweet chocolate chips, banana chips and candied pecans, beating for 10-20 seconds, or until combined.
    - Chill the dough in the refrigerator (in the bowl is fine) for 30 minutes.
    - Using a scale and cookie scoop, measure out 6 oz of dough, forming each into a ball. You should end up with 5 dough balls in total.
    - Place the dough balls on a lined cookie sheet and chill for an additional 30 minutes.
    - Set the over to 400F.
    - Combine remaining milk chocolate chips, semi-sweet chocolate chips, banana chips and candied pecans into a bowl, rolling each dough ball in the toppings until fully covered. The cookies now should be roughly 8 oz.
    - Add any additional toppings, filling the gaps of dough on the outside of the cookie as needed.
    - Baking in the oven at 400F for 10 minutes, then increase the oven temperature to 425F and bake for an additional 10 minutes or until golden brown.
    - Leave the cookies on the baking sheet for 15 minutes to cool before transferring to a wire rack or serving plate.
    - For best results, let the cookies cool over night (no need to cover them) and enjoy!
