    Chinese Salt and Pepper Chips Recipe
    Ingredients:
    - Cooked Chips (Fries) - 4 cups (freshly fried or baked until crispy)
    - Vegetable Oil - 2 tablespoons
    - Garlic - 3 cloves, finely minced
    - Green Bell Pepper - 1/2, finely sliced
    - Spring Onions - 2, finely sliced
    - Chinese Salt and Pepper Chili Seasoning (prepared earlier) - 1-2 teaspoons, or to taste
    - Red Chili - 1-2, finely sliced (adjust according to heat preference) (optional)
    - Sesame Seeds - 1 teaspoon (optional, for garnish)
    - Coriander (Cilantro) - a handful, chopped (optional, for garnish)
    Chinese Salt and Pepper Chili Seasoning Recipe
    Ingredients:
    - Sea Salt - 2 tablespoons or 1 ½ tablespoon table salt
    - Sichuan Peppercorns - 1 tablespoon or black pepper
    - White Pepper Powder - 1 tablespoon
    - Chilli Flakes (preferably dried red chilli flakes) - 1 tablespoon
    - Garlic Powder - 1 teaspoon
    - Onion Powder - 1 teaspoon
    - Five-Spice Powder - 1/2 teaspoon (optional, for extra depth)
    - Sugar - 1/2 teaspoon (optional, balances the heat)
    - MSG - 1 teaspoon (optional)
    - Chicken bouillon powder - 1 teaspoon. I use Knorr

      @@carinadouah1951 Monosodium Glutamate. It's a flavor enhancer. One common US brand is Accent. Rik put a wonderful explanation he wrote below as a response to a comment. Scroll down to
      @albuchanan, open up the replies and hit " Read more. You'll get the whole article he wrote.
      It's been around forever; I grew up with it. It was Grandma's not-so-secret secret ingredient. It's not without controversy. Some folks are sensitive to it and it got a bad reputation but if you're not bothered by it, it makes savory dishes taste better. Hope this helps but really, read Rik's piece. I'm a chemist (the US kind) and everything he wrote is completely accurate.

      MSG monosodiumglutamate enhances the flavour of many things. Chinese takeaways often use lot, I've seen great sackfulls in a Chinese trade supermarket in England.

      Here in the Philippines it is also known as, vetsin, ajinamoto, mono sodium glutamate, my wife always had rashes and headaches, now she doesn't use it, it's really poison. In the supermarket there shelves full of the stuff, small packets to kilo packets, scary, you don't need it your cooking.

    Me & my missus love you Rik, nowt pretentious, or arty farty, just good old common sense & sound advice. Heres our tip, if you can keep a big plant pot of soil in a sunny spot near the kitchen, plant your spring onions straight from shop instead of fridge. 8 months of the year they grow. When they are 29p at Aldi buy 10 packs and chuck them in the soil. We use those big plastic boxes the council dished out for recycling as plant pots. Great for easy potatoes as well 👍🏻

    I can imagine a hundred uses for that seasoning mix, I'll be making it, it's brilliant, thanks Rik :) Side Note: I've noticed Rik has a good selection of stainless steel bowls, as do I. They work for everything, can be used on stovetop or oven, and last a lifetime (I have even used them to make a disappearing still for brandy :) They are well worth the investment.

    Rick! Please tell me what chicken powder is? Is that stock powder or something else? Maybe we call it something else here 🤷🏼‍♀️
    That looked so tasty. Never thought of putting stir fried veggies over chips before. I’ll have to give that a go 👍🏼

    I love that not only does this get some healthy and delicious fresh veggies into us, how fabulous that vegetarians can enjoy this yummy flavoursome dish. Bravo!
    Salt and Pepper Chilli Chips I believe started this side of the world in Irish Chinese takeaways, and fast took off. It's now a favourite across UK takeaway establishments I believe - and as it contains no meat or fish, should be less expensive than many popular dishes.

    Tasty and easy to make. That´s great dish. I replaced the chilli with equal parts of habanero and anch chilli. I alsoused way less sugar. That´s my preference.

    Thank you for the salt,and pepper seasoning recipe,as you probably know we don’t have salt,and pepper seasoning in the US,but I see it all over the British UA-cam channels,but didn’t know what was in it.I finally found someone who not only spoke English,but also knew where things were in the Chinese supermarket,so now I have Chinese five spice powder,but I keep forgetting the MSG powder.I actually saw it one week,but it was a 2lb (1k 108g) bag I sort of thought that it was over kill.American supermarkets have it under the name Accent,I just need to remember to buy it.😊

    I almost always alter recipes. Not to be disrespectful or to say I know better but we have dietary restrictions and I often swap ingredients based on what I have on hand.
    This one is being made exactly as presented. I'm learning about UK/Asian/South Asian fusion takeout and so far I've loved every one. Thank you, Rik for another gift from across the Pond.
    That said, my mind is spinning for ways to use the spice blend. Right off the bat I'll use it for air-fried tofu for quick meals and roasted chickpeas for snacks. Plain old roasted potato wedges or even better, sweet potatoes! I'm roasting cabbage later on so I think we're off and running.

    Cracking dish that I will try now - I always thought salt n pepa fries a bit of an English fish shop gimmick but that looks lush. Salt n pepa is one of my favourite mixes on squid. ribs, grilled chicken wings and prawns. I spend half the year working in the Philippines where squid is known as pusit and I can't help hum "salt n pepa's push it" if I have ordered when it comes the the table

    This s gen stuff Rik. Thanks for passing this on. BTW - Diane is right... MSG is just as bad for you as table salt or sugar. In moderation, it's an indispensable in my kitchen. Keep up the good work. While I'm on, my grandmother used to make a Sussex Pond Pudding - a suet pudding with a whole lemon inside. Have you got a recipe for this?

    cheers Rik, i will make a batch of powder, and i dont mind a soggy chip, i sometimes wrap my cooked chips in kitchen paper and leave them for a few mins it gives the the chip shop taste. How much MSG.

    QUESTION FOR RIK: Hi lovely Rik - Are you telling us to add just-cooked chips to the frying pan? You don' t actually cook any chips in the video, so I'm not clear on that?
    If so, are you adding freshly-cooked chips to the frying pan (containing vegetable oil, garlic and sliced veg, ie garlic, onion, green pepper and spring onions), and if so, should they be proper, deep-fried chips, or will oven chips do?

      I know you said it was for Rik, but yes, they are fully cooked before going in the pan. I use basic straight cut frozen chips for mine. I have never tried oven chips, but I wouldn't imagine there being any difference, as long as they are fully cooked.

    That looks like something I really want to try. Suppose i wanted to do a meat version (chicken, pork or beef) how do you suggest to prepare the meat? The usual thin sliced, brine in baking soda 10 minutes, rinse, marinate in soy, shaoxing, corn starch, oil then quick fry?

    Iv just made your corn beef hash pie, it cost diddly squat to make.
    My question is MSG you said it in this video, and Alex uses it and it took ages for me to find it and there isn't much said about it apart from it could be bad for you, what's your views Rik.

MSG is widely used in cooking, particularly in Asian cuisines, to enhance the umami flavor-the fifth basic taste alongside sweet, sour, salty, and bitter.
      How to Use MSG in Cooking
      1. Flavor Enhancement: MSG is primarily used to enhance the umami or savory flavor of dishes. It works well in soups, broths, sauces, stir-fries, and marinades.
      2. Quantity: A small amount of MSG goes a long way. It is typically used in very small quantities (about 1/4 to 1/2 teaspoon per pound of meat or vegetables). It's advisable to start with a small amount and adjust according to taste.
      3. Application: MSG can be sprinkled directly onto foods or added during cooking. It dissolves easily in water-based recipes, such as soups and stews.
      4. Pairing with Other Flavors: MSG works best when combined with other flavors, such as salty and sour, and enhances the natural flavors of the ingredients.
      Health Considerations and Controversies
      1. Safety and Consumption: MSG is generally recognized as safe (GRAS) by the U.S. Food and Drug Administration (FDA) and other health organizations worldwide. Numerous studies have found that MSG, when consumed in typical amounts, does not pose a health risk for the general population.
      2. MSG Symptom Complex: Despite its recognized safety, some people report sensitivity to MSG, often referred to as "MSG Symptom Complex" or "Chinese Restaurant Syndrome." Symptoms can include headaches, flushing, sweating, chest pain, and nausea. These symptoms are generally mild and temporary and occur at high doses that are unlikely to be consumed in a typical diet.
      3. Asthma and Allergic Reactions: In rare cases, MSG has been reported to trigger asthma or allergic reactions, though scientific evidence is limited and not conclusive.
      4. Long-Term Health Effects: No consistent scientific evidence supports claims that MSG contributes to long-term health problems, such as neurological damage or cancer. The majority of research suggests that MSG is safe for most people when consumed in normal dietary amounts.
      5. Cultural and Psychological Factors: Some of the concerns about MSG may stem from cultural or psychological factors, where people associate negative health effects with its use due to pre-existing beliefs or experiences.
      Alternatives to MSG
      For those who prefer to avoid MSG or are sensitive to it, there are several natural ways to enhance umami flavor in dishes:
      - Mushrooms: Rich in natural glutamates, especially shiitake and porcini mushrooms.
      - Tomatoes: Fresh, sun-dried, or in paste form, tomatoes add a rich umami flavor.
      - Soy Sauce and Miso: Fermented products that naturally contain glutamates and enhance savory flavors.
      - Parmesan Cheese: Aged cheeses have high levels of glutamates and can be used to boost umami.
      - Anchovies or Fish Sauce: Both are rich in natural glutamates and provide a strong umami punch, often used in small quantities.

      @@BackyardChef wow thanks for going to all that effort Rik . My wife through it away as we tried it once and didn't see a difference . my brother says Chinese dishes are not the same as a long time ago 1980s as he said they were better then than now , could that be the MSG not been used or was it something else .

    Chinese cooking prefer thin spring onions.
    Western cooking prefer thick ones they dont hav much flavor.
