I adapted the recipe a little bit, adding 1 package of Vanilla sugar to the pudding (instead the orange flower water) and I made a raspberry sauce with Port. Usually, back in time the lowerclass used alot of fragrance in food to mask the flavour of the low quality ingredients. This was mainly in 3rd world countries and spices.
Go dig into stuff from a couple generations before these recipes. It'll literally say things like "to make a roaft of beef, take a goodly cutt of beef and there-to caft sugar, salt, and ginger, add good red wine, and cook in a slack oven until done."
That's the problem with old recipes. They were largely passed down orally by a mother twaching her daughter exactly how they made it, and the written ones were vague on the assumption that you'd OF COURSE play around with the measurements until you were satisfied with it.
I think orange flower water would be like rose water but with blossoms from an orange tree. Kind of how there's cherry blossom flavoured stuff (popular in Japan and other places around the world, but not as popular in America) but instead it's orange blossom

I think the whole point is you are supposed to make them and see how it is in real life. Though keeping in mind apples probably taste differently today than they did back then because fruits have been altered over the years MRE Crocombes apples were most likely much smaller or much larger than what you see here

Like saying isinglass was unavailable at the store, and that orange flower water is an “old fashioned flavor”. Not only is it a cool historical video but it’s also an effective recipe video. If I'm not mistaken, the orange water is the victorian era's version of vanilla. This is judging by how she describe the uses of orange water.

Usually, back in time the lowerclass used alot of fragrance in food to mask the flavour of the low quality ingredients. This was mainly in 3rd world countries and spices.

That's the problem with old recipes. They were largely passed down orally by a mother twaching her daughter exactly how they made it, and the written ones were vague on the assumption that you'd OF COURSE play around with the measurements until you were satisfied with it.

I think orange flower water would be like rose water but with blossoms from an orange tree. Kind of how there's cherry blossom flavoured stuff (popular in Japan and other places around the world, but not as popular in America) but instead it's orange blossom
@@jocelynecupcake You're exactly right, it is the water from the orange blossom, which is probably related to the orange citrus fruit... Flower waters/extracts are used as natural flavorings for many things. I drunk new Rubicon hibiscus and rose flavoured fizzy drinks the other day.

I think the whole point is you are supposed to make them and see how it is in real life. Though keeping in mind apples probably taste differently today than they did back then because fruits have been altered over the years
