Here the chef is putting the dough on weighing scale. In India we won’t need weighing scales to measure the items. There is no need of measurements of items - by experience the expert cooks will weigh them through their hands. So in India we won’t need weighing scales to measure the dough. We also won’t need gas stoves - as we get excellent taste through wood fire , which is natural way of cooking; we won’t need dough making machines, as we can knead the dough with our two clean hands with our muscles ; so we also won’t need gloves and costly utensils, tiled or marbled tables , refregirators etc because we don’t eat stale and tasteless food. In India we live naturally.
