For the vegan ground beef, I would put mushrooms in a food processor

I'm SO glad I found this recipe. For some reason, I've been craving dirty rice. I'll modify this by using the Beyond sausage patties lightly cooked and chopped like what would normally be found in the NO's version. It should give it more of that authentic taste. There's a hot Beyond sausage version that I might try or I might add a little more pepper flakes to the original one.
No matter which I decide, thank you for this recipe. I'm following for more inspiration!
