It's been a little while since I have watched this episode, but I believe it is a singular "lobster." The creature naturally detects the changes in brain activity that occur when someone is lying, but this particular specimen was specifically trained to kill anyone who lies while it is attached to their head. The wheelchair man uses it to either ensure truth, or punish deception.

I get him, though. Imagine you were stranded so far away from home you basically have no hope of ever returning and you're surrounded with aliens who, it turns out, can be as frustrating as earthlings. Eventually you get to a point where you DGAF and if anyone looks at you funny you just pull out all the stops, cut all the crap and to hell with it. It's pretty good character development if you ask me. Remember, in the beginning of the show he was much more calm and stable, trying to understand everything around him.
this was actually one of the highest per episode budget shows in tv history. about 1-2 million dollars per episode and that wasn't due to actor salaries but effect budgets.
