Lamb Stew (Anglo Indian)

  • This delightful Anglo Indian Stew is so full of flavors from all different vegetables combined with the flavor of Lamb, produces a wonderful wholesome dish for the whole family to enjoy.
    Ingredients
    2 Ladle Spoons Oil
    1 Kg Lamb
    3" Ginger chopped
    6 Black Cardamom
    6 Cinnamon Sticks
    20 Peppercorns
    12-15 Cloves
    6 Dried Whole Red Chillies
    5-6 Bay Leaves
    4 Large Onions chopped
    4 Large Tomatoes chopped
    6-7 New Potatoes
    1 Whole Cauliflower
    1 Cup Peas
    3 Carrots
    Half Cup Chapati Atta
    Salt to taste
    Fistful Coriander

    I’m an A.I. from Calcutta. Left in 1961. Thanks I see you still use a dekchi (so do I sometimes). I make stew similar to yours but this is the first time I have seen dhaniya sag added. Will try it next time. I’ll soon be 90!!! and still learning!

    My dad used to sell this in his restaurant. People loved it! Tried looking up a recipe for my wife to learn that she is Russian and I finally found the recipe here! We just add green chilies for the fragrance and spice.

    I make stew exactly the same way only i dont use atta i use cornsrarch only mix the cornstarch with cold water.thank u pearl

    I have never put coriander in my stew, sometime next week I will be making an Oxtail stew 🥘 I make my Anglo Indian dumplings with flour and water roll it out and cut into diamond shapes and add it to the stew for the last 15 minutes, that tends to thicken the stew!

    Pearl m a goan we have a similar ingredients except for bay leaves n red chili. Green chillies n fresh coriander I ground to fine paste, I must try ur recipe once I go to Goa as v don't get good beef in Mumbai. 😋

    I did find a way to save time was to cut and boil the vegetables, while going about preparing and cooking the meat. That way both the meat and veges are ready together. I used a pressure cooker. 10 minutes striking the meat and spices in the pan, and then it took 10 minutes and 5 whistles on the pressure cooker. I added the veges in then.And the roasted flour. It came out superb. Thank you.

      @@sharon7lyrd I didn’t roast the flour in this video I used plain chapati flour , but if you roasted the flour that must also be very tasty ❤️😁🙏🏽

    Thank you aunty, back in the day mumma cooked everything in the fat, without adding any oil. She always got a big piece of "charbi" from the meat shop.

      Hi Lovina, no I put it as it is as it has so much time to cook so it doesn’t need browning it, but I’m sure if I did, it would taste just as delicious 🤗❤️
