- Hello, sweet friends and welcome to another Foodie Friday! In today's video, we are continuing with our easy weeknight dinners with a fan favorite in our house - Chorizo Chicken! And the perfect vegetable pairing, Mexican corn. I am so excited to have you give these a try! I hope you enjoy!! XO - Tiffany
// CHORIZO CHICKEN //
Chicken breast
Pork chorizo
Ranch seasoning
Salt
Slice chicken breast thin. Season with Ranch (or seasoning of your choice) and salt. Cook on stove top. Cook chorizo on stovetop. Layer chicken and then chorizo in a casserole dish and bake or broil until warm and bubbly. Top with cheese of your choice, lime juice, avocado, sour cream and cilantro.

Corn on the cob
Mayonaise
Sour Cream
Lime juice
Chili powder
Cumin
Salt
Cotija Cheese
Cilantro
Shuck and cut corn on the cob. Bring water to boil and cook 5-6 minutes. While cooking, mix 1/4 cup mayo, 1/4 sour cream, a splash of lime juice, and a dash or 2 of chili powder and cumin. Salt to your liking. Once corn is done, add sauce, Cotija cheese and cilantro.
