Gajar (Carrot) Halwa

  • 1 kg gajar grated (approx 8 cups
    1&1/2 cup whole milk
    1/2 cup water
    1 &1/2 cup sugar
    6 tablespoons ghee
    1/2 teaspoon cardamom powder
    Chopped and sauted cashew in ghee to garnish
    Instant pot method :
    Saute the grated gajar in 2 spoons of ghee for 2-3 min,add milk ,water & 3/4 cup sugar.Close the lid ,seal it and let it cook on high pressure mode for 2 min.
    After the NPR (natural pressure release) ,turn the saute mode on and add the remaining sugar . Keep stirring until the liquid reduces.
    Add ghee (generously) ,and khova (or 2-3 spoons of milk powder) for a nice consistency.Keep stirring until the carrot becomes dry and oozes the ghee.Now is the time you would see the delicious orange colored halwa.Add cardomom powder and garnish with roasted cashews .Serve it warm or Relish it with a scoop of vanilla icecream.
