- Besan Badam Barfi is a delicious and aromatic Indian sweet made with gram flour (besan), almonds (badam), ghee, and sugar. INGREDIENTS -
1 cup besan (gram flour)
½ cup almond 50gm(or finely ground almonds) 1 cup dry coconut 1 tablespoon pamkinseed 1table spoon magaj seed 1 table spoon khaskhas 1 table spoon soath powder 1/2 spoon ajwain
1 cup ghee (clarified butte 1 cup juggry
1spoon ghee or water
6 cardamom powder
2 tbsp chopped almonds & (for garnish)
PROCESS -
1. Roasting the Besan & roasting Almond and coconut seeds
2. Heat ghee in a pan on low-medium heat.
Add besan and roast while stirring continuously until it turns golden brown and aromatic (about 10-12 minutes).
3. Add almond coconut seeds and roast for another 2 minutes. Grind it
4. Preparing juggry Syrup:
In another pan, heat juggrry and ghee
Let it come to a one-string consistency (when you take a drop between fingers, it should form a thin string).
5. Mixing Everything:
Once the sugar syrup is ready, pour it into the roasted besan-almond nut seed mixture.
Stir continuously on low heat until the mixture thickens and starts leaving the pan.
Add cardamom powder and mix well.
6. Setting the Barfi:
Grease a tray with ghee and pour the mixture into it.
Flatten it evenly and sprinkle chopped almonds and pistachios on top.
Let it cool for 1-2 hours before cutting into squares or diamonds.
7. Serving & Storing:
Once set, cut into pieces and enjoy!
Store in an airtight container at room temperature for 5-7 days.
