I've noticed that this seems to be an English/Scottish divide. English dancers will usually take a ballroom hold and gallop enthusiastically across the room, Scottish dancers will tend to do a two hand hold and be a bit more restrained in the gallop. I suspect that it's the influence of the Royal Scottish Country Dance Society (RSCDS) on the Scottish end of things.

I did a gallop across in school, ballroom hold. Didnt walk in a circle, we skipped. Different tune. 83 yrs uk
