I am not a big fan of french food and I don't eat junk food loaded with fat and suger. But this type of food one should at leest try one time and if you don't like then you don't have to eat it any more.
I'm going to guess that it is because, while we do have and eat a lot of cheese in France, we don't cook all that much with it. I mean, we do have raclette, fondue and tartiflette, but cheese is mostly eaten with bread, just like that. Not that interesting.

The meat is marinated for 24 hrs or more in Burgundy red wine before it is cooked. The meat will never be tender if you do it the way it is made in the video. There isn't any potatoes or Tomato paste (potatoes and tomatoes are from the Americas), but the recipe is older than the introduction of potatoes & tomatoes in Europe by the Spanish. There isn't any valid reason to prepare a pricey, Veal broth when you're using relatively poor quality beef cuts in a ragout and even less so if you're going to use a red Burgundy wine as the main boiling medium. I question the use of a Bouquet garni for long cooking time like this. Fresh herbs will only taste awful by the end. I'm afraid that the Russian Chef knows what he's talking about here! ;)
