BEST CEYLON BEEF FRY & THOPALAN SAMBOL - PRESERVE MADE WITH DRIED FISH. SRI LANKAN MUSLIM FOOD!

    although it takes alot of my time to do all the research and video and editing to bring you these recipes, it gives me immense pleasure to be sharing the authentic version of such recipes that benefits your catering businesses and family.
    Preserving such recipes is our way of giving our ancient and beautiful culture its due respect.
    Please do share this video with your family and friends as this is the way i can support my channel.
    Hope you enjoy making these absolutely delicious yet severely underrated relishes from Sri lanka.
    Ceylon Beef Fry recipe ingredients:
    1 kg of veal topside or tenderloin.
    6 big bombay onions finely sliced.
    1 bunch of curry leaves.
    1 inch pandan leaves cut into pieces (you can fry this along with the curry leaves)
    1 stick of cinnamon.
    4-5 pods of cardomom.
    3 cups of coconut oil or cooking oil for deep frying.
    For the marination of beef:
    1 TBS of red chili powder.
    1/2 tsp of Tumeric powder.
    1 cup of Tamarind juice.
    Salt and pepper to taste.
    WATCH VIDEO FOR METHOD.
    THOPALAN SAMBOL:
    500 grams of maldive fish or dried sprats grinded into flakes.
    4-5 big bombay onions finely sliced.
    1 bunch of curry leaves.
    1 inch pandan leaves cut into pieces (you can fry this along with the curry leaves.
    4 bird eye green chillies cut into bits.
    3 cups of coconut oil or cooking oil for deep frying the onions and curry leaves.
    ( I haven't showed this when making the thopalan because i had already done it before.)
    1 stick of cinnamon.
    4-5 cardamom pods.
    Juice of one lime.
    salt to taste.

    *You can also grind the sambol afterwards and make it into a corse paste which is the orginal way of having it. People often confuse this as Maasi sambol. Maasi is a word and NOT A DISH. The direct translation for Maasi is Maldive fish. So you can call this Maasi sambol. Also please note if you want to make this a paste like the Galle version.. you simply have to add more onions and grind it coarsely to a paste and add a little tamarind juice.

    For the thoplan after mixing all the fried ingredients we grind n make it a paste .that's how it's made in galle where thoplan originated.

      You are 100% correct. I totally forgot to mention the origins and you can ground it and make it to a paste like in Galle. So many delicious dishes orginated from the south and north of lanka.

    I'm Sri Lankan descent, and I have never heard of these symbols! Thank you very much indeed. On a side note, the boiled and shredded beef is called "serunding daging" in Malaysia and Brunei where I grew up!

    Hi Ruzaina, thank you for sharing the 2 lovely sambols. The thoplan beef fried sambols. In Malaysia we have anchoviesl, prawn, cuttlefish, fish and many more sambals. Malaysians love sambal with rice. Will really try your 2 sambols. Cheers from Malaysia.

      Yes, please.. you can opt out of the curry leaves and pandan leaves, and it is still delicious. My relatives make this in Ireland without curry leaves and pandan, and it's still great.

    Great Show. Your Sri Lankan food recipes are simply best. Fried Shredded Beef sambal is popular in Malaysia. It is called Serunding. It can be stored in bottle for months. People take it when traveling to perform Haj.
    Thoplan sambal is one of a kind. Thanks for showing how it is done. How to make it less oily?
    I have a request on behalf of the future generations. Please show how to make UPPPU Desika sambal with dried BILING fruit ☺️

    Haven't had beef symbol since childhood!. I will definitely be making it, using beef cheeks though, it's the perfect cut for the meaty pulling strands needed for this dish. I'm all for using veal, but beef cheeks will have far better flavour and texture. I was also, almost naturally thinking, if you are Christian, this would actually be equally great made with pulled pork and a spiced white vinegar, like a Portuguese inspired version the original. My favourite symbol is something my mother used to make, but something I haven't seen anyone else make. It used deep fried karawilla and vomboto, red onion and vinegar and a few other ingredients? I miss it and would like to make it again if the dish is known and traditional.

      Raj Singha... i love talking to people like you.. who knows what they are talking about when they speak of food... i couldnt agree more on the beef cheeks.. because like you said it will have a much stronger flavour and perfect strands for the sambol.
      I dont eat pork.. but do give this a try.. so many pulled pork recipes in european destinations.. this can definitely be the Sri lankan version of it.
      Yessss.. i know this sambol.. we put fried sprats along with the karavila and egg plants and preserve it with vinigar and mustard. Sri lanka all these differenent sambols and preserves.. such a bliss. ❤️🇱🇰

      HELLO !!!! So good to hear from you. Yes sambal are derived from Malaysia and localized in Lanka.. This sambol is also one such recipe but its mainly done by the Moor community and started in Galle.

    I'm guessing that the good Maldive fish these days is the product made in Sri Lanka. The Maldives now produces Maldive fish only in name. The small quantities that are produced are now produced by Maldive-owned businesses that use Bangladeshi labour. The Maldivians are now too rich to dirty their hands, doing messy and smelly work such as producing Maldive fish.

      Lol.. I find this a very interesting comment, . Because if you know more than one language its better than being fluent in English. Also we were colonized country. So i guess that influenced the way we speak english too. 😂

    Who said it’s a Malay food it’soriginated mainly from moor community and this is not thoplan sambol it’s not mixed with beef it’s purely from maldivefish red onions and the famous moor community who was called thoplan ootaar are still there

      Did you watch the full video or are you just commenting because you are bored... Lol. Who said this is a Malay dish???? Also yes the Thoplan sambol is made with Maldives fish and I make it in this video.. I have studied socio economy in food science and Sri Lankan culture.. I know what I am talking about. Please watch the video before trying to comment. Thoplan sambol is clearly explained. Be glad that someone is actually talking about these food and I have paved a way for minority cuisine in Sri Lanka in a global scale. I am sick and tired of people like you commenting with racial undertones who haven't even watched the video. It's so disheartening.
