How to prepare Mee Goreng Sambal ? Malaysian Chilly Paste for Goreng items | English Subtitles

  • Mee Goreng means fried noodles in Malaysian language. In countries such as Malaysia, Singapore, Indonesia and Brunei, one can find this noodle dish in the market, or by the roadside. They are sold by street vendors or hawkers, especially Indian-Malaysia.
    This is the recipe for Malaysian chilli paste, or famously called “Sambal” and serves as a definite accompaniment for Nasi Lemak, Malaysia’s signature dish. It is also the main ingredient for Mee Goreng and all other varieties of goreng.
    Sambal is a type of chilli dish which serves as a condiment. It is so versatile that it can be served with noodles, rice or even flat bread.
    This sambal paste can be stored for 1-2 weeks in the refrigerator. This paste can be used for various dishes such as mee goreng, bee hoon goreng, sambal fried rice, fish sambal and so on.
    INGREDIENTS:
    Dried Red Chilies - 100gm
    Garlic - 100gms
    Small onions - 100gm
    Salt to taste
    Sugar - 1tbsp
    Pandan leaves - 5 pcs
    Lemon leaf - 2 (Alternative to lemon grass)
    Baby shrimp - 2tbsp
    Dried Anchovy Fish - Handful (Depends on ones taste and flavour)
    Oil - 100ml
    PREPARATION:
    1. Boil the red chilies, remove the seeds and grind to a paste. Keep aside.
    2. Grind garlic and onions separately.
    3. Grind the baby shrimp and dried anchovies together.
    4. In a pan, add 100 ml of oil.
    5. Once it turned hot, add baby shrimp anchovies paste.
    6. Add garlic paste immediately and mix well.
    7. Let it cook until raw smell goes off.
    8. Now add onion paste and cook well.
    9. Add red chilly paste, mix well, cover with lid and cook well until raw smell goes off.
    10. Cook on low flame by stirring in between.
    11. Let the oil separate on the sides of pan.
    12. Now add salt to taste, sugar, pandan leaves and lemon grass (or lemon leaves).
    13. Mix well, cover with lid and cook for another 10mins in low flame.
    14. Tasty Mee Goreng Sambal is ready now.

      My pleasure. Some Restaurants do add food colour which we felt is unnecessary and obviously unhealthy. The bright red colour comes from the red chillies itself.
