yum! I loved sweet potatoes when I was little. I suggest you try corn fritters. there so good! I was spending a night at a friend's house (she aspires to be a chef) and we made some corn fritters. and let me tell you, they were all gone the same day they were made XD and I'll be honest I like them when the insides a little undercooked and you just have a little bit of batter inside. but yeah, definantly suggest them :3

I have tried to make this thing about six different times, and for the life of me, I can't get it to puff up with one large pocket. I don't know if I'm pushing too hard or not hard enough or too soon or there's not enough water in the dough to make steam, but I can't seem to figure it out. I don't even understand how it creates a pocket in the first place. In cream puffs and eclairs, the gluten creates a net to contain one big bubble, but sweet potato starch doesn't have gluten so I don't have any idea what the heck is going on.
