You should make goblin(Bob) animation and try to make animation of him steeling gold or something like that.

Gold coins and maybe even have him carrying some type of bag to carry the gold in on his back in the animation. This would be a really cool little character.

I think it would be great to get some sort of flying enemy whether it be a bird or dinosaur or mythological creature. I'm really interested in the process of making it look like it's actually flying and not floating

Wings are the absolute hardest thing to make imo
Elemental? Air elemental with lower half a tornado might be cool. Spear guy? Bipedal frog or newt holding a spear may work well.

Most classic games have humanoids as 2 tiles tall. (some enemies like slimes are still 1 tile tall, like in Zelda II). So, it would be great to see standard platform characters that are two tiles tall in the next sprite.

Two very different suggestions-either terrain/backgrounds, or a cephalopod (e.g. octopus).
I'd love to see more pixel art renditions of the hollow knight art style/color palette. You could possibly do a cloaked antagonist. Something like a grim reaper type.
A slime? A skeleton? Now you need a bat to finish out the trifecta of common enemies!

Let's you do 2 in 1, you make a normal chest and make an attacking version of that for the mimic :)
